Creamy Asian Coleslaw (vegan)

- For the dressing:
- 1/4 cup creamy raw almond butter
- 1/4 cup fresh lime juice
- 1 tablespoon tamari (wheat-free soy sauce)
- 1 small clove garlic, minced (about 1/2 tsp.)
- freshly minced ginger, to taste (I used about 1/2 tsp.)
- liquid stevia, to taste (I used 8 drops)
- For the coleslaw:
- 7 oz. shredded cabbage
- (plus any extra toppings you like)
Thai Chicken Salad

In a medium skillet add coconut oil over medium-high heat
- 1 lb ground chicken
- 2 tbsp coconut oil
- 1 shallot or 1/2 of a small yellow onion, minced
- 3 garlic cloves, minced
- 3 cups red or green cabbage, shredded
- 1/2 cup carrots, grated
- Juice of 2 limes
- 1-2 tsp red pepper flakes, optional
- 2-3 tbsp of fish sauce
- 1-inch ginger piece, peeled and grated
- Stevia to taste
- Handful of basil, julienned
- 12 mint leaves, minced
- 1/2 cucumber, seeded and sliced into 1/2 moons
- 2 scallions, chopped
- Small handful of cilantro, chopped

Cream almond butter, coconut oil, maple syrup, and salt together in a bowl Pour mixture into a parchment paper lin
- Serves 10
- 1 cup almond butter
- 3 tablespoons of coconut oil
- 2 tablespoons of maple syrup
- 3 tablespoons of raw cacao nibs
- 3 tablespoons of goji berries
- 1/4 tsp sea salt

No Bake Snickerdoodle Truffles

In a food processor, combine the cashew butter, almond flour, maple syrup and cinnamon
- 1 cup cashew butter (or nut butter of choice)
- 3 T almond flour
- 3 T maple syrup
- 1 1/2 tsp cinnamon
- 1/2 cup chocolate chips
- 1 T coconut oil
Crock Pot Applesauce

Throw everything in the crock pot
- 10 apples peeled, cored and cubed
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 heaping tsp ginger
- 1/4 tsp cloves
- 1 ground vanilla bean(pure vanilla extract would work too)
- 1/2 cup water
Banana Walnut Freezer Fudge
