  • 2 cups quinoa, rinsed and drained
  • 4 cups vegetable broth
  • 1/2 large white onion, chopped
  • 1 serrano pepper minced, seeds removed for less heat
  • 4 garlic cloves minced
  • 1/2 tablespoon Mexican oregano, leaves crushed with fingers
  • Zest & juice of 2 limes
  • 1/2 cup chopped cilantro
  • 1/4- 1/2 tsp salt, use less salt if your broth is already well seasoned
  • Additional lime juice if needed
