Gluten Free Crust

- 1/2 cup almond flour
- 1/2 cup millet flour
- 1 cup brown rice flour
- 1/4 cup chia seeds
- 1/2 teaspoon unrefined sea salt
- 7 tablespoons organic extra virgin coconut oil (such as Barlean’s), at room temperature
- 1 organic, pastured egg plus 1 egg white (such as Vital Farms)
- 5 tablespoons water
Slow Cooker Enchilada Quinoa Bake

Yield: About 7 - 8 servings
- 1 Tbsp canola oil
- 1 1/4 cups chopped yellow onion (1 medium)
- 1 1/4 cups chopped red bell pepper (1 medium)
- 3 cloves garlic , minced
- 1 1/2 cups dry quinoa
- 2 1/4 cups vegetable broth
- 1 (14.5 oz) can tomatoes with green chilies, undrained
- 1 (8 oz) can tomato sauce
- 2 Tbsp chili powder
- 1 1/2 tsp ground cumin
- Salt and freshly ground black pepper , to taste
- 1 (14.5 oz) can black beans, drained and rinsed
- 1 (14.5 oz) can pinto beans, drained and rinsed
- 1 1/2 cups frozen corn
- 1 1/2 cups cheddar or monterey jack , or Mexican blend cheese
- Diced avocados , diced Roma tomatoes, chopped cilantro, lime wedges, chopped green onions (optional)
- For Serving: diced avocados, diced Roma tomatoes, chopped cilantro, lime wedges, chopped green onions

In a "to go" glass container of your choice: Place oat groats, ezekiel cereal/oats, cinnamon, currants, chia seeds,...
- Serves 1 Total Time 10 min
- 1/4 cup oat groats rinsed and drained
- 1/4 cup ezekiel cereal, muesli, or 1/4 cup steel or rolled oats (for texture)
- 1 tsp of currants
- sprinkle of cinnamon
- 4 ounces unsweetened almond milk
- 1 tsp of chia seeds (optional)
- 1 cup fresh or frozen fruit of your choice
Quinoa Brownies

Preheat oven to 350. Put all ingredients in a blender
- 1 1/4 cup cooked quinoa
- 1/2 cup cocoa powder
- 1/2 cup maple syrup
- 2 flax eggs (you can use real eggs if you like)
- 1/2 cup unsalted almond butter
- 1/3 cup unsweetened applesauce
- 1/4 cup coconut oil
- 1/2 cup vegan chocolate chips
- 2 tsp vanilla extract
- 1/2 tsp sea salt
Banana Bread Oatmeal

Add ingredients to pre-made cooked soaked oatmeal
- 4 cups cooked soaked oatmeal
- 3 TB butter or coconut oil
- 2 mashed banana plus more to top if you wish
- 1 1/2 TB cinnamon
- 1/2 tsp vanilla extract
- 2-4 TB pure maple syrup (Optional – the bananas sweeten if enough)
Brussels Sprouts with Smoked Ham and Pine Nuts | Food Network UK

Drizzle a little olive oil into a pan and preheat
- Olive oil
- 1 garlic clove
- 1 cup smoked ham, cut into sticks (sub cooked bacon)
- 3 tbsp toasted pine nuts
- 3 cup brussels sprouts, finely sliced on a Japanese mandolin
- 2 tbsp water

- 1 T raw honey or maple syrup
- 1/4 cup white wine vinegar
- 1/2 tsp garlic powder

- salt to taste

- 2 sweet potatoes (peeled and boil until soft)
- 2 green onions chopped fine
- 1 1/2 cups black beans (measurement is after soaking and cooking)
- 1 flax egg
- 1 T smoked paprika
- 1 cup rolled oats
- 2 T nutritional yeast
- salt to taste
