Spring Vegetable Risotto

Preheat the oven to 400 degrees F
- 1 pound green asparagus
- 2 teaspoons olive oil
- 2 tablespoons butter, divided
- 1 clove garlic, smashed
- 1/2 pound green peas
- 1 shallot, minced
- 2 cups short-grain rice
- 1/4 cup white wine
- 3 cups warmed vegetable stock or water
- 2 tablespoons freshly grated parmesan cheese
- 1 tablespoons vegetable oil
- 4 eggs
- salt to taste
- fresh black pepper
- 5-6 leaves fresh basil, chiffonnade
Pureed White Bean Soup

Soak the beans overnight with water and splash of apple cider vinegar
- 2 cups white beans
- 4 cups water
- 1 tbsp apple cider vinegar
- 2 tbsp avocado oil
- 2 large shallots (about 1 cup) sliced
- 4 garlic cloves, chopped
- 6 cups stock or water
- 1/4 cup olive oil
- 1 tbsp fresh chopped rosemary
- Juice of 1 lemon
- 2 tsp sea salt
Mashed Potato Enchiladas by Thyme & Love

1. Preheat the oven to 350 degrees
- Ingredients:
- 1/2 tablespoon vegetable oil
- 1 1/2- 2 cups leftover mashed potatoes {I used my creamy slow cooker mashed potato recipe}
- 12 corn tortillas
- 1 1/2 cups Green Enchilada Sauce {recipe follows}
- 1/4 cup chopped cilantro
- For the Green Enchilada Sauce: {makes more than you’ll need for enchiladas}
- 2 pounds tomatillos, husked and rinsed
- 1-2 serranos minced
- 2 garlic cloves minced
- 1/4 white onion chopped
- 1/2 cup cilantro chopped
- 1 tsp salt
- 1 tsp Mexican oregano
- 1/2 cup water
- 1 tablespoon vegetable oil
Spinach and Artichoke Quiche

- Serves 6
- 1 package (9 ounces) frozen artichokes (such as Bird’s Eye)
- 1/8 teaspoon unrefined sea salt, plus more to taste
- 2 teaspoons extra virgin olive oil, plus more for drizzling on the artichokes
- 1 large shallot (or 2 small shallots), chopped
- 3 cups baby organic spinach
- 1/2 cup raw cashews (ideally the cashews would be soaked in water for 2 hours and then drained)
- 5 organic, pastured eggs (such as Vital Farms)
- 1 tablespoon fresh lemon juice
- 2 tablespoons finely chopped parsley
Homemade Ranch Seasoning Mix

- Yields about 1 cup
- 1/3 cup dry buttermilk (**see note below**)
- 2 Tbsp. dried parsley
- 1 1/2 tsp. dried dill weed

Clean Shrimp and Grits Recipe (with Old Bay Seasoning)

Rinse the peeled and deveined shrimp with cool water and pat very, very dry with paper towels
- 30 large shrimp, peeled and deveined
- 2 teaspoons Old Bay Seasoning
- 2 teaspoons unrefined organic red palm oil
- 1 3/4 cup water plus 4 cups water, separated
- 1 cup pine nuts
- 1 teaspoon unrefined sea salt, plus more to taste
- 2 cups coarse cornmeal (such as Bob's Red Mill)
- 1 tablespoon extra virgin olive oil
- 1 organic green bell pepper, finely chopped
- 1 organic red bell pepper, finely chopped
- 1 organic yellow bell pepper, finely chopped

- 2 eggs, large
- 1/4 cup egg whites

- 2/3 cups mozzarella cheese, low fat

- Filling:
- 2 cups chicken broth, low sodium
- 1/2 cup milk, 1%
- 1/4 cup flour, whole wheat
- 1 tsp salt
- 1 tsp black pepper, ground
- 10 white mushrooms, sliced
- 3 garlic cloves, minced
- 1 large onion, finely chopped
- 4 cups frozen peas, carrots & corn mix, thawed
