Rhubarb Muffins

Sift together flour, brown sugar, baking powder, baking soda and salt into a large bowl
- 2 1/2 cups unbleached flour
- 1 1/4 cups brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 egg
- 1 1/3 cups diced rhubarb (well-drained, if frozen)
- 1/2 cup chopped walnuts
- 1 tbsp melted butter
- 1/3 cup granulated sugar
- 1 tsp cinnamon
Creamy Orange Trifle

Stir gelatin into cold water until dissolved
- 1 envelope unflavored gelatin
- 1 cup cold water
- 1/2 cup boiling water
- 1 (6 ounce) can frozen orange juice concentrate
- 3 tbsp lemon juice
- 1 cup sugar
- 1 pint heavy cream
- 1 bough angel food cake, about 8 ounces
- 1/2 cup toasted, slivered almonds
- Orange zest (optional)
Rice Pudding

Beat eggs. Add honey, sugar, nutmeg, and cinnamon, and mix well
- 3 eggs
- 2 tbsp honey
- 6 tbsp sugar
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1/2 tsp vanilla
- 1 cup milk (1 cup nonfat dry milk and 1 cup water)
- 3/4 cup evaporated milk (2/3 cups nonfat dry milk and 3/4 cup water)
- 1 1/2 cups cooked rice
- 1/2 cup raisins
Broccoli-Cheese Quiche

- 2 cups broccoli florets
- 1/2 cup chopped onion
- 1 cup cottage or ricotta cheese
- 1/4 cup buttermilk or yogurt
- 3 eggs, beaten
- 1/4 cup shredded Swiss cheese
- Dash of freshly grated nutmeg
- 1 unbaked pie crust
Tomato Soup

Pour the oil into a large pot over medium heat
- 2 tablespoons olive oil
- 1 large or 2 medium onions, halved and thinly sliced
- 1 carrot, chopped
- Salt
- Freshly ground black pepper, to taste
- 2 tablespoons tomato paste
- 1 sprig fresh thyme or 1/2 teaspoon dried
- 2 pounds tomatoes, cored and chopped or one (28-ounce can) diced tomatoes, including the juice
- 2 or 3 cups water or tomato juice
- 1 teaspoon sugar, optional
- 1/4 cup chopped fresh basil leaves for garnish, optional
Pear-Cranberry-Ginger Cutie Pies

- 3/4 cup water
- 1 1/2 cups granulated sugar
- 1 (16 ounce) bag fresh or thawed frozen cranberries
- 4 medium-sized Bosc pears
- 1/2 teaspoon fresh minced ginger
- 1 teaspoon cornstarch
- 1 All-Butter Pie Crust (recipe follows)
- Whipped cream lightly flavored with vanilla and a hint of ginger, optional
- All-Butter Pie Crust:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 1 cup (2 sticks) unsalted butter, cold, cut into 1/2-inch cubes
- 3/4 cup cold water
Eggnog Spice Bundt Cake

- 1 (18 1/4-ounce) box spice cake mix
- 1 (4-serving) box instant vanilla or cheesecake pudding and pie filling mix

- 1 cup light eggnog
- 1 egg
- 3 egg whites
- 1 1/3 cups toasted chopped pecans

Black Bean Casserole

- 1 pound black beans
- 1 1/2 cups red onion, chopped
- 2 cloves garlic, minced
- 3 stalks celery, chopped
- 2 carrots, chopped
- 1 tsp salt
- 1/2 tsp ground black pepper
- 2 bay leaves
- 1/4 tsp dried oregano
- 1 tbsp chopped fresh parsley
- 4 tbsp butter
Tomato and Bagel Salad

Preheat oven to 375 F. Cut bagels in half, then cut each half into 6 wedges
- Dressing:
- 3 plain bagels
- 2 medium tomatoes
- 1 bunch asparagus, blanched and cut into 2-inch pieces
- 12 ounces small fresh mozzarella balls, drained
- 1/2 red onion, thinly sliced
- 6 leaves fresh basil, cut in thin strips
- 2 medium tomatoes, halved
- 1 tbsp chopped shallots
- 2 tbsp chopped garlic
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 2 tsp salt
- 1 tsp freshly ground black pepper
- 1/2 tsp crushed red pepper
