  • 1 1/2 cups canned crushed Italian tomatoes
  • 1/2 cup 1/4-inch sliced carrots
  • 1 cup 1/4-inch sliced celery
  • 4 cups 1/4-inch sliced okra
  • 1 cup diced red bell peppers
  • 1 cup diced green bell peppers
  • 1 cup sliced yellow squash
  • 1/2 cup fresh corn kernels
  • 1 tbsp Cajun Spice (recipe in collection)
  • 1 tsp paprika
  • 1/2 tsp fenugreek
  • 1/4 tsp red pepper flakes
  • 10 ounces tofu, pressed and cubed
  • Freshly ground black pepper
  • Salt
