This vegetarian gumbo is very high in protein because of the tofu
- 2 cups diced yellow onions
- 2 cups vegetable stock
- 1 1/2 cups canned crushed Italian tomatoes
- 1/2 cup 1/4-inch sliced carrots
- 1 cup 1/4-inch sliced celery
- 4 cups 1/4-inch sliced okra
- 1 cup diced red bell peppers
- 1 cup diced green bell peppers
- 1 cup sliced yellow squash
- 1/2 cup fresh corn kernels
- 1 tbsp Cajun Spice (recipe in collection)
- 1 tsp paprika
- 1/2 tsp fenugreek
- 1/4 tsp red pepper flakes
- 10 ounces tofu, pressed and cubed
- Freshly ground black pepper
- Salt
