Heart Healthy Carrot Salad

Cut carrots into thin strips 2 to 2 1/2 inches long
- 1 1/2 pounds carrots, peeled and trimmed
- 1/3 cup lemon juice, fresh
- 2 tsp Dijon mustard
- 1 tsp sugar
- 1 tbsp olive oil
- 1/4 tsp pepper
- 3/4 cup green onions, chopped
- 1/4 cup parsley, fresh, minced
Oven-Roasted Potatoes with Fresh Herbs

Oil and butter are not necessary to create delicious oven-roasted vegetables
- 2 pounds small red potatoes
- 2 tbsp vegetable stock
- 1 tsp chopped fresh rosemary or 1/4 tsp dried
- 2 tsp chopped fresh parsley or 1 tsp dried
- 1/8 tsp dried sage leaves
- 2 tsp paprika
- 2 tsp freshly ground black pepper
- 1 tsp salt (optional)
