Uncle Larry's Broccoli Salad

Mix broccoli and green onions, chives or Walla Walla sweet onions with carrots and raisins
- Dressing:
- Broccoli, diced
- Green onions, chives or Walla Walla sweet onions, diced
- Carrots, shredded
- Raisins
- 1/2 cup sugar
- 1 cup mayonnaise
- 2 tbsp vinegar
Scalloped Potatoes with Blue Cheese and Rosemary

Preheat oven to 350 F. Prepare a 9-by-13-inch baking pan with butter or a light cooking spray
- Sauce:
- 6 to 8 russet potatoes, depending on the serving dish size
- 2 tsp salt
- 1/2 tsp black pepper
- 1 1/2 tsp minced fresh rosemary
- 3/4 cup crumbled blue cheese
- 3/4 cup grated Parmesan cheese
- 1 cup sour cream or light sour cream
- 2 cups cream or light cream
- 1 tsp salt
Portobello Barley Risotto

Until a few years ago, it was proper to make risotto using only arborio rice from Italy
- 4 tbsp olive oil
- 1/2 pound Portobello mushrooms, wiped clean with a damp cloth and cut in 1-inch chunks
- 1 medium-sized onion, coarsely chopped
- 4 1/2 cups defatted vegetable broth
- 1 cup pearl barley, rinsed
- 1/2 tsp ground allspice
- 1 tbsp chopped fresh rosemary (or 1 tsp dried and crumbled)
- 1/2 cup sweet white wine, such as Reisling
- 1/2 cup golden raisins
- Salt, to taste
- Freshly ground pepper, to taste
- 2 tbsp chopped flat-leaf parsley, for garnish
Tangerine Granita

You can also use orange juice - either way, use fresh juice for the best flavor
- 1/2 cup sugar
- 1/2 cup water
- 1/4 cup light corn syrup
- 4 cups fresh tangerine juice
- 2 tbsp grated tangerine rind
- 1/4 cup orange juice concentrate
- 2 tbsp lemon juice
- 1/8 tsp salt

- Whites of 4 eggs beaten stiff, add 1 cup sugar when half beaten, 1/2 tsp. cream tartar, pinch salt. Bake like a meringue on a buttered pie plate, 275° for 25 minutes.

- 1 1/2 cups water
