Fourth of July Raspberry / Blueberry Pie with Crust on Top

No bottom crust to get soggy, faster than a traditional pie, with a better texture
- Pie Crust:
- 3/4 cup flour
- 1 tsp sugar
- 1/4 tsp salt
- 3 tbsp unsalted butter, cut into small pieces
- 1 tbsp solid vegetable shortening
- 3 to 3 1/2 tbsp water
- Pie Mix:
- 3 cups mixed raspberries and blueberries
- 1 tbsp cornstarch
- 1/4 cup sugar, plus 1 to 2 tsp for crust, optional
- 1/4 tsp ground cinnamon
- 1 tsp lemon juice
- 1 egg white, beaten, optional
- Vanilla ice cream
Chocolate Ginger Peanut Butter Crunch

Place all ingredients in a blender and mix on low speed for 1 minute
- 1 banana, in chunks
- 2 cups plain low-fat soy milk
- 1 tbsp crunchy peanut butter
- 1/4 cup chocolate syrup
- 1 tsp ground ginger

Cranberry Chutney Cream Cheese Dip

Note that the recipe makes 2 cups of the chutney while the dip uses only 1/2 cup
- Cranberry Chutney:
- 1 (12 ounce) bag fresh cranberries, picked over for stems
- 1/4 cup orange juice
- 1 to 2 fresh jalapeno or canned chipotle chilies in adobo sauce, minced
- 1/2 cup firmly packed light brown sugar
- 1/2 tsp kosher salt
- Grated zest of 1 well-washed lime
- Grated zest of 1 well-washed orange
- 3/4 cup pecans or walnuts, toasted and coarsely chopped
- Dip:
- 1 (8 ounce) package cream cheese, at room temperature
- 1 1/4 cups Cranberry Chutney (see above)
- 1 tsp curry powder
- 1 scallion (white and green parts), finely chopped for garnish
Aromatic Brown Rice Pilaf

Note: To toast nuts, heat in a dry skillet over medium heat until they start to brown
- 2 tablespoons vegetable oil
- 1 tablespoon unsalted butter
- 1 large cinnamon stick
- 2 whole cloves
- 3/4 cup minced onion
- 1/2 teaspoon ground cardamom
- 2 cups uncooked brown rice
- 1 cup water
- 2 cups chicken broth
- 1/4 cup seedless raisins or chopped dates
- 1/2 teaspoon salt
- 1 tablespoon grated orange zest
- 1/4 cup unsalted pistachios, toasted (see note)
Apricot Muffins

- 1 cup chopped dried apricots
- 3 cups whole wheat flour
- 1 tbsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg

- 1 egg, beaten
- 3 tbsp safflower oil
- 1 cup chopped pecans or almonds
