Mini Chocolate Chip Cookies

Preheat oven to 375 F. Cream together butter, oil and brown sugar
- 2 tbsp butter, softened
- 2 tbsp canola oil
- 1/2 cup dark brown sugar
- 1 tsp vanilla extract
- 1/8 tsp salt
- 1 large egg white
- 3/4 cup all-purpose flour
- 1/4 tsp baking soda
- 3 ounces semi-sweet chocolate chips (about 1/2 cup)
Honey Rice Pudding

- 3/4 cup milk
- 2 eggs, beaten
- 3 tbsp honey
- 1 tsp vanilla extract
- 1 1/2 cups cooked brown rice
- 1/2 cup wheat germ
- 1/2 cup raisins or chopped dried apricots
Warm Spinach Salad

Regular fresh spinach may be used in place of baby spinach but will result in a less delicate salad
- Salad:
- 1 (7 ounce) bag baby spinach greens
- 1/2 cup fat-free salad croutons
- Dressing:
- 1/4 cup white vinegar
- 1/4 cup water
- 1/4 cup Dijon mustard
- 3 tbsp Splenda, granular
- 5 slices veggie bacon
- 1/4 cup red onion, chopped
- 2 garlic cloves, minced
- Olive or other vegetable oil (for sauteeing)
Dark Chocolate Ganache Cheesecake

Heat oven to 325 F. Mix graham crumbs, 3 tbsp sugar and butter; press onto bottom of 9-inch springform pan
- 1 1/2 cups Honey Maid Graham Cracker Crumbs
- 3 tbsp sugar
- 1/3 cup butter or margarine, melted
- 4 pkgs (8 oz each) Philadelphia Cream Cheese, softened
- 1 cup sugar
- 1 tsp. vanilla
- 4 eggs
- 1 tub (8 oz) Cool Whip Whipped Topping (do not thaw)
- 6 oz Baker's Bittersweet Chocolate
- 1 cup fresh raspberries

- 2 ounces apple cider
- 1 ounce club soda

Easy Pie Crust

- 2 cups raisins
- 1 1/2 cups water
- 1 cup packed dark brown sugar
- 1 cup (2 sticks) butter, softened
- 1 3/4 cups old-fashioned oats
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 3 egg yolks
- 1 cup granulated sugar
- 1 1/2 cups sour cream
- 2 1/2 tbsp cornstarch
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
Flourless Raspberry Chocolate Cake

Preheat oven to 350 F. Lightly grease 2 ramekins using 1 tbsp of butter
- Garnish:
- 1/3 cup plus 1 tbsp unsalted butter, divided
- 2 (1 ounce) squares bittersweet chocolate
- 2 (1 ounce) squares unsweetened chocolate
- 7 tbsp seedless red raspberry jam, divided
- 2 tbsp orange zest
- 2 large eggs
- 1/3 cup sugar
- 1/4 cup orange juice
- Frozen whipped topping
- Fresh raspberries
Choco-Zucchini Cake

Cream margarine and sugar until light and fluffy
- Sugar Glaze:
- 3/4 cup margarine
- 2 cups sugar
- 3 eggs
- 2 tsp vanilla
- 2 tsp grated orange rind
- 2 cups grated unpeeled raw zucchini

- 1/2 cup cocoa

Sweet Potatoes with Cranberry Glaze

- 1 1/2 cups whole cranberry sauce
- 4 tbsp orange juice (or 3 tbsp Gran Marnier)
- 2 tbsp lemon juice
- 1 cup light corn syrup (or maple syrup)
- 2 tbsp melted butter
