Banana Oatmeal Cookies

2011-10: I made these cookies and found them to be too heavy
- 3/4 cup solid vegetable shortening
- 1 cup sugar
- 1 egg
- 1 cup mashed bananas
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 2 cups quick oats
- 1 cup chocolate chips
Baked Oatmeal

I've enjoyed oats a thousand different ways in my life, and this is my favorite
- 2 cups/7 oz/200 g rolled oats
- 1/2 cup/2 oz/60 g walnut pieces, toasted and chopped
- 1/3 cup/2 oz/60 g natural cane sugar or maple syrup, plus more for serving
- 1 teaspoon aluminum-free baking powder
- 1 1/2 teaspoons ground cinnamon
- Scant 1/2 teaspoon fine-grain sea salt
- 2 cups/475 ml milk
- 1 large egg
- 3 tablespoons unsalted butter, melted and cooled slightly
- 2 teaspoons pure vanilla extract
- 2 ripe bananas, cut into 1/2-inch/1 cm pieces
- 1 1/2 cups/6.5 oz/185 g huckleberries, blueberries, or mixed berries
Three-Tomato Soup

If you like your tomato soup on the sweet side, add a teaspoon or two of honey
- 2 tablespoons olive oil
- 1 cup chopped onion
- 1/4 cup chopped celery
- 1 leek, white and light green parts only, chopped
- 3 cups reduced-sodium chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 3 (14-ounce) cans diced tomatoes, undrained
- 1 (8-ounce) can tomato sauce
- 2 sprigs fresh thyme
- 1 cup 2 percent reduced-fat milk
- 2 tablespoons balsamic vinegar
- Freshly ground black pepper

Mixed Baby Greens and Roasted Almonds in Orange Vinaigrette

Mix vinegar, orange juice, salt and pepper together
- Dressing:
- 8 ounces fresh mozzarella, sliced
- 5 cups mixed baby salad greens
- 1 medium navel orange, peeled and thinly sliced
- 1/2 cup roasted almonds, chopped
- 1/4 cup olive oil
- 1 tbsp red wine vinegar
- 2 tbsp orange juice
- 1/4 tsp salt
- Freshly ground black pepper, to taste
Jamba Juice

Combine, blend, serve
- 8 ounces juice (apple best)
- 2 scoops sherbet ice cream (raspberry, orange)
- 4 to 5 strawberries
- 1/4 banana
- 1/4 cup ice
Mint-Glazed Brownies

Melt chocolate with butter in saucepan over very low heat, stirring constantly until smooth
- 1 package (8 squares) unsweetened chocolate
- 1 cup butter
- 5 eggs
- 3 cups sugar
- 1 tbsp vanilla
- 1 1/2 cups flour
- 2 cups coarsely chopped walnuts
- 2 dozen wafer-thin chocolate-coated after dinner mints (Andes or similar)

Mix eggs with honey. Blend in dry ingredients
- 3 eggs, well beaten
- 3/4 cup honey
- 3/4 cup whole wheat flour
- 1/4 cup soy flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1 cup chopped, pitted dates
- 1 cup chopped nuts
- 1/2 cup shredded coconut
- 1/4 cup wheat germ
- 1/4 cup bran
