Chocolate Dessert Pizza, Flourless

The decadent and flourless crust for this dessert pizza uses only three ingredients
- For the crust
- 8 oz. dark chocolate (higher than 52% will lead to a less desirable outcome)
- 1/2 cup butter
- 3 eggs
- For the topping
- Raspberries, fresh mint leaves, flaked coconut, or whatever you have on hand
- Chocolate sauce or melted chocolate chips (learn how to make homemade chocolate perfect for drizzling in my ecookbook, The Paleo Sweet Tooth)
- Coconut butter - not to be confused with coconut oil (it's available here or save money and learn to make it at home in this video)
Sweet Potato Souffle

- SWEET POTATO CASSEROLE
- 6 or 7 cooked mashed sweet potatoes (baked or boiled) selection tip: choose small or medium sweet potatoes with smooth skin and no/few bruises
- 1/4 cup butter
- 1 egg
- 3 or 4 Tablespoons brown sugar
- 1/2- 3/4 teaspoon vanilla, depending on taste
- 1/4 teaspoon of cinnamon (optional)
- 1/2 cup chopped pecans (Brenda used a gluten free granola on top after it was cooked …fearing it may brown too much otherwise.
- 1/2 cup freshly squeezed orange juice (fresh is important or you may get a flavor that overwhelms the sweet potatoes- so aim for fresh!)
- 1 teaspoon grated orange zest
- 1/2 cup pecan halves for topping
- salt to taste
Tomato Basil Mozzarella Salad

- 1 pint cherry tomatoes, halved
- 8 ounces fresh “mini” mozzerella pearls
- 4 tablespoons olive oil
- 18 basil leaves, chopped
- 1/2 teaspoon Kosher salt
