Blueberry-Lemon Pie

Preheat the oven to 375 degrees F
- 1 deep dish pie crust
- 6 cups blueberries
- 3/4 cup sugar, plus more for dusting the pie
- 5 tablespoons cornstarch
- Grated zest and juice of 1 lemon
- 2 tablespoons cold unsalted butter, cut into thin pats
- Heavy cream, for brushing the pie
Scallops Provencal

Sea scallops, cut each 1 in half horizontally
- 1 pound sea scallops
- Kosher salt and freshly ground black pepper
- All-purpose flour, for dredging
- 4 tablespoons (1/2 stick) unsalted butter, divided
- 1 /2 cup chopped shallots (2 large)
- 1 garlic clove, minced
- 1 /4 cup chopped fresh flat-leaf parsley leaves
- 1 /3 cup dry white wine
- 1 lemon, cut in 1/2
Tiramisu

Whisk together the coffee, rum and espresso powder in a small bowl until dissolved
- 2 cups strong brewed coffee, cooled, or non-concentrated cold-brew coffee
- 2 tablespoons dark rum
- 1 tablespoon instant espresso powder
- 5 large egg yolks
- 2/3 cup sugar
- 1 1/2 teaspoons kosher salt
- 1 pound mascarpone, softened
- 1/4 cup coffee liqueur
- 3/4 cup cold heavy cream
- 2/3 cup mini semisweet chocolate chips
- 50 lady fingers, the crustier the better (NOT the cakey ones; they will fall apart)

Position an oven rack in the lower third of the oven and preheat to 425 degrees F
- 1 1 1 deep dish pie crust
- 1/4 1/4 1/4 cup light brown sugar
- 1/4 1/4 1/4 cup granulated sugar
- 3 3 3 tablespoons cornstarch
- 1 1 1 teaspoon ground cinnamon
- 1 1 1 teaspoon kosher salt
- 1/4 1/4 1/4 teaspoon ground ginger
- 1/4 1/4 1/4 teaspoon ground nutmeg
- 5 5 1 3/4 1/4-inch apples (about 1 3/4 pounds), peeled and cut into 1/4-inch slices
- 1 1 1 tablespoon fresh orange juice
- 2 2 1/4-inch tablespoons unsalted butter, cut into 1/4-inch pieces
Chicken Fried Rice Casserole

For the eggs: Preheat the oven to 375 degrees F
- Nonstick cooking spray, for spraying the baking dish
- 1/2 cup drained canned bean sprouts, patted dry
- 4 large eggs
- 2 cloves garlic, grated on a rasp
- Two 10.6-ounce packages prepared microwavable rice, such as Veetee
- One 8.5-ounce can peas and carrots, drained
- 1/4 cup soy sauce
- 1/2 rotisserie chicken (truly, halved right down the middle), meat pulled off the bones and shredded, then chopped
- 1/4 cup French-fried onions, crumbled
- 2 scallions, white and green parts, finely chopped
- Sriracha, to taste

- 1/2 cup chopped PLANTERS Pecans, divided
- 38 NABISCO Ginger Snaps, finely crushed (about 1-1/2 cups)
- 1/4 cup butter or margarine, melted
- 4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1 cup sugar
- 1 can (15 oz.) pumpkin
- 1 Tbsp. pumpkin pie spice
- 1 tsp. vanilla
- 4 eggs
- 25 KRAFT Caramels
- 1/4 cup milk

Chicken "Saltimbocca": Saltimbocca di Pollo

Directions Season the flour with salt and pepper
- 1 cup all purpose flour
- Salt and pepper
- 4 (8-ounce) chicken breasts
- 4 large slices prosciutto
- 4 large sage leaves, plus 20 smaller leaves
- 2 cups plus 4 tablespoons extra-virgin olive oil
- 4 shallots, thinly sliced
- 1/2 pound oyster mushrooms, sliced into 1/4-inch pieces
- 1 cup Marsala wine
- 1/2 cup chicken stock
- 2 tablespoons butter
- 1 bunch Italian parsley, chopped to yield 1/4 cup
Piquillo Pepper and Cheese Toasts

Preheat oven to 400 degrees
- 1 medium baguette, thinly sliced into 16 rounds
- 1/4 cup extra-virgin olive oil
- 16 piquillo peppers (from one 12-ounce jar), drained and patted dry
- 4 ounces sliced aged provolone cheese, cut into 16 one-inch squares
- Garnish: 1 scallion, pale-green part only, thinly sliced on the bias
