Skinny Chicken Broccoli Casserole

Instructions 1. You need to cook your chicken and cut it into bite sized(ish) pieces - this is how I do it
- Cook time: 25 minutes
- Ingredients
- 1 lb chicken breast boneless, skinless
- 1 package frozen broccoli, broken apart
- 1 can reduced fat cream of mushroom soup
- 2 tablespoons fat free mayo
- 1/2 cup shredded cheddar cheese
- 1/4 cup crumbled crackers (optional)
Cheesy Baked Dip

Mix first seven ingredients together and put into the hollowed out bread loaf
- 8 oz. sour cream
- 8 oz. cream cheese
- 16 oz. cheddar cheese, grated (sharp or mild)
- 4 oz. chopped green chilies
- Green onion (suit your own taste)
- 1 c. chopped ham (cooked)
- 1/2 pound chopped bacon (cooked)
- 1 round bread loaf, hollowed out
FRENCH TOAST BAKE

1. Melt butter in microwave & add brown sugar
- 1/2 cup melted butter (1 stick)
- 1 cup brown sugar
- 1 loaf of thickly sliced bread
- 4 eggs
- 1 1/2 cup milk
- 1 teaspoon vanilla
- Powdered sugar for sprinkling
- Cinnamon for sprinkling

- 4 sliced bacon, fried crisp
- 4 baking potatoes, scrubbed
- 1/4 cup olive oil
- 1/4 cup butter

- 1/2 cup shredded Parmesan cheese

- 24 oz. container frozen strawberries, sliced with sugar added
- 3 cups sugar free vanilla pudding (i use regular pudding)
- 16 oz. container of whipped cream (i use slightly less than the whole container)
- fresh strawberries for garnish
WATERMELON CRAWL

2 oz. Watermelon Pucker (Schnapps) 1
- 2 oz. Watermelon Pucker (Schnapps)
- 1.5 oz. Southern Comfort
- 1.5 oz. Amaretto
- 1.5 oz. Orange Juice
- 1.5 oz. Pineapple Juice
- Splash of grenadine
- Garnish with cherries
PAMPERED CHEF CHICKEN & BROCCOLI RING

Instructions Serves: 4 Preheat oven to 375 degrees F
- 1 package (8 ounces) refrigerated crescent rolls
- 1 cup cooked chicken
- 3/4 cup coarsely chopped broccoli
- 1/2 cup (2 ounces) shredded cheddar cheese
- 1/4 cup diced red bell pepper (my note: mom subbed green peppers)
- 2 tbsp mayonnaise
- 1 tsp Pampered Chef Pantry All-Purpose Dill Mix (or dried dill)
- 1 small garlic clove, pressed (minced)
- 1/8 tsp salt
- 1/8 tsp pepper
- 1 egg white, lightly beaten
- 2 tbsp slivered almonds

- Fill pot with water then add a stick of salted butter and 1 cup of milk. Bring to a rapid boil. Put ears of corn in turn heat to low simmer for 5-8 minutes It will be the best corn on the cob you have ever had !!!
Crispy Bacon Grilled Cheese Roll Ups

Using a rolling pin, roll slices of bread flat
- 8 slices of bread, crusts removed
- 8 slices of cheese or 1 cup+ grated cheddar
- 8 slices precooked bacon
