Hearty Wild Mushroom Soup

Combine dried mushrooms with boiling water in a medium bowl
- 1 Ounce Dried Mushroom Medley (dried porcini mushrooms is ok too)
- 3 Cups Boiling Water
- 2 Tablespoons Olive Oil
- 9 Cups Various Mushrooms (portabella, shitake, button), cleaned and chopped
- 1/2 Cup Diced Red Onion
- 2 Cloves Garlic, grated
- 3 Tablespoons Butter
- 3 Tablespoons All-Purpose Flour
- 3 Cups Vegetable Stock
- 1 Tablespoon Salt
- 1 Teaspoon Pepper
- 3 Sprigs Thyme
- 2 Tablespoons Goat Cheese
- 2 Tablespoons Fresh Chopped Parsley

In a medium-sized bowl, toss the chicken with 2 tsp of soy sauce and then baking soda
- 4 ounces boneless chicken, thinly sliced
- 1 teaspoon baking soda
- 2 tablespoons oyster sauce
- 4 teaspoons light soy sauce, divided
- 2 teaspoons sugar
- 2 teaspoons rice vinegar
- 1 garlic clove, minced
- Vegetable oil
- 8 ounces flat rice noodles
- 1 1/2 cups broccoli florets, sliced
- 2 large eggs
- 2 tablespoons sweet dark soy sauce

Combine oatmeal and protein powder in a medium sized mixing bowl
- 2 cups old fashioned oatmeal
- 1 scoop (21 grams) vanilla protein powder (I used a vegan
- brown rice protein powder)
- 1/2 cup creamy natural peanut butter
- 1/2 cup unsweetened vanilla almond milk
- 1/4 cup maple syrup
- 2 Tablespoons cocoa powder
- 1/2 teaspoon vanilla
- 1/8 teaspoon sea salt
Vegan Salted Dark Chocolate Nut Bars

Preheat oven to 350° F and line a large, rimmed baking sheet with parchment paper
- 1 cup raw almonds
- 1 cup raw cashews
- 1 cup raw walnuts
- 1/3 cup raw buckwheat groats
- 1/3 cup puffed quinoa
- 1/4 cup plus 1 tablespoon raw honey
- 1/4 teaspoon fine grain sea salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 3 tablespoons chocolate
- A nub of coconut oil
- Flaky sea salt for sprinkling (Maldon is my favorite)

Place a rack in the upper third of the oven and preheat oven to 350 degrees F
- 1 C whole wheat flour
- 1/4 C + 2Tbs all purpose flour
- 1/4 C + 2Tbs cocoa powder
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 C butter, room temp
- 1/2 C brown sugar
- 1/4 C sugar
- 1 large egg
