Ingredients

    tbs oil

    minced garlic clove

  • 2

    sliced gr onions

  • tbs minced fresh ginger

  • 1

    tsp cumin

  • ½

    tsp coriander

  • ¼

    tsp ground cloves

  • ½

    tsp ground cardamon

  • ¼

    tsp dry mustard

  • ½

    tsp ground turmeric

  • ½

    cinnamon stick

  • 1

    tsp salt

  • 3

    c. chicken broth

  • 3

    tbs lime juice

  • 1

    tbs honey

  • 3

    sliced carrots

  • c. sliced mushrooms

  • 2

    c. cauliflower florets

  • 1

    med diced potato

  • 1

    c. broccoli cole slaw mix

Directions

In large saucepan melt butter and add the oil. Cook the garlic, onions and ginger stirring for one minute. Add spices and cook 2 minutes to release the flavors. Add chicken broth, lime juice and honey. Cook 4 more minutes. Add the vegetables and cook covered until tender about 15-20 minutes. Remove cinnamon stick and serve.
