Cajun Dirty Rice

Heat 2 tablespoons of canola oil in a large skillet over medium heat
- 2 tablespoons canola oil
- 1/2 tsp crushed red pepper flakes
- 3 cups cooked rice
- 1 leftover Blackened Catfish fillet, flaked with a fork
- 1 cup Trinity Sauteed Veggies(onions, peppers, & celery)
- 1 teaspoon Cajun seasoning
- 1 (15-ounce) can red kidney beans, drained and rinsed
- Salt and freshly ground black pepper, optional
Refreshing Broccoli Salad

Combine all ingredients into a medium size mixing bowl
- Dressing:
- 2 cups of chopped raw broccoli, chopped small
- 1 medium red pepper, diced
- 1 red or green apple, diced
- 1 ripe avocado, pitted, peeled and cubed
- 3 radishes, thinly sliced
- 1/4 cup of sunflower or pumpkin seeds (or any chopped nut)
- 1/4 cup of raisins
- 1/2 teaspoon minced garlic (2 small cloves)
- 1/2 teaspoon turmeric
- 2 tablespoons olive oil
- 1 tablespoon of apple cider vinegar
- 1 tablespoons of vegan mayo (or regular..whatever you’re into)
- 1 tablespoons of honey
- Juice and zest of one lemon
Spinach-Blueberry Salad

Toss spinach, blueberries and pecans in a large bowl
- Dressing (blend in blender):
- 1 16 oz bag spinach
- 1 pint blueberries
- 1/2 cup toasted pecans
- 1/4 cup crumbled blue cheese
- 1 shallot chopped
- 1 pint blueberries
- 5 tbs sugar
- 1/2 c. raspberry vinegar
- 1 c. canola oil
- Chicken - opt
Texas Style Chili

Heat oil in a large nonstick Dutch oven over medium-high heat
- 2 tsp oil
- 1 lb stew meat, cut into 1/2 inch chunks
- 1 med onion
- 2 med carrots, shredded
- 1 tbs cumin
- 2 tsp chili powder
- 4 oz can chopped gr. chilies
- 14 oz can chicken broth
- 28 oz can fire roasted diced tomatoes
- 15 oz can each kidney, black and pinto beans, drained & rinsed
- 1 1/2 c. frozen corn
One-Bowl Microwave Macaroni and Cheese

Combine the pasta, the water, and the salt in a microwave-safe bowl
- 1/2 c. macaroni pasta
- 1/2 c. water
- 1/2 tsp salt
- 1/4 c. milk, any percent
- 1/4-1/2 c. shredded cheddar cheese
Chicken Parmigiana

Preheat oven to 400 degrees F
- 4 boneless, skinless chicken breasts, pounded thin
- Salt and black pepper
- 2 c. all-purpose flour, seasoned with salt and pepper
- 4 lg eggs, beaten with 2 tablespoons water and seasoned with salt and pepper
- 2 c. panko bread crumbs
- 1 c. vegetable oil or pure olive oil
- 1 32 oz jar spaghetti sauce
- 1 lb mozzarella, thinly sliced
- 1/4 c. freshly grated Parmesan
- Fresh basil or parsley leaves, for garnish
Shades of Greens Salad

Toss together and serve with dressing
- 1/2 c. green peas
- 1/2 c. cooked lima beans
- Salt & pepper to taste
- Mixed greens (leaf lettuce & spinach)
- 1/4 c. sunflower seeds
- Green goddess dressing (recipe to follow)
- Green Goddess Dressing
- 1/2 c. yogurt
- 2 Tbs mayonnaise
- 1/4 c. chopped basil
- 1 tsp chopped chives
- 1 tsp lemon juice
- 1/4 tsp salt
- Dash of garlic powder
- Mix well, chill and serve.
Mexican Coleslaw

Mix, chill and serve
- 1 package Slaw Mix
- 2 c. corn, thawed
- 1 can drained black beans
- 1/3 c. diced green onions
- 1 c. diced tomatoes
- 1/2 c. diced black olives
- 1/4 c. diced cilantro
- 1 avocado chopped
- 3/4 c. ranch dressing
Crockpot Pork Roast Dinner

Place potatoes and baby carrots around bottom edge of 4-6 quart crockpot
- 1 pound small red potatoes, cut in half
- 16 oz. pkg. baby cut carrots
- 3 pounds boneless pork loin roast, trimmed of fat
- 1/4 cup Dijon mustard (or mustard of your choice)
- 1/2 tsp. dried tarragon leaves
- 1/2 tsp. dried thyme leaves
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups beef broth
