Delicious & Healthy Cauliflower Tabbouleh

Grate the entire head of cauliflower (stem and leaves omitted), so that it resembles quinoa or rice
- 1 head cauliflower
- 4 tomatoes
- 1 cup cilantro, chopped
- 1/4 cup lemon juice
- 1/4 cup lime juice
- 2 tsp garlic powder
- Sea salt and black pepper, to taste
- This recipe makes 4 servings
Portuguese Baked Eggs

Heat oil in a large heavy pot over medium heat
- SERVINGS: 6
- 1/4 cup olive oil
- 3 bell peppers, any color, thinly sliced
- 1 medium red onion, thinly sliced
- 2 beefsteak tomatoes, cut into wedges
- 8 garlic cloves, thinly sliced
- 1 jalapeño, with seeds, halved lengthwise
- 1/4 cup fresh basil leaves
- 2 tablespoons fresh oregano leaves
- 1 1/2 teaspoons chili powder
- 1 teaspoon paprika
- Kosher salt and freshly ground black pepper
- 1 cup ricotta
- 6 large eggs
- 1 cup grated sharp white cheddar (about 4 oz.)
- 1/4 cup grated Parmesan (about 1 oz.)
- Toasted country-style bread (for serving)

Directions Combine the garlic, jalapeno and vinegar in a bowl
- 6 garlic cloves, minced
- 2 jalapenos, minced
- 1/4 cup red wine vinegar
- 1 bunch fresh flat-leaf parsley, finely chopped

- 2 limes, juiced
- 1 cup olive oil
- 1 teaspoon kosher salt
- 1 teaspoon crushed black peppercorns
- 4 pounds skirt steak, trimmed of excess fat
- Extra-virgin olive oil
- Kosher salt and freshly ground black pepper

Parboil the potatoes in a pan of salted boiling water for 5 to 6 minutes, or until almost cooked through
- 2 medium potatoes, cut into 3cm chunks

- 150 g good-quality raw iberico chorizo
