This is a recipe my friend from work gave me
- 1 lb Lean ground beef
- 1 lb lean ground pork
- 1 Tbsp olive oil
- 2 large cans plain tomato sauce
- 2 med cans crushed tomatoes
- 1 med can tomato paste
- 1 red bell pepper
- 1 large onion
- 4 garlic cloves
- 5 slices bacon (optional) cut into small piece, cooked and drained
- 2 shredded carrots
- 1/2 handful FRESH thyme
- 1/2 handful FRESH oregano
- 1/2 handful FRESH basil
- 2 Tbsp sugar
- salt, pepper to taste

- 1 1/2 lbs carrots, washed, peeled and cut into 1-inch pieces on the bias
- 1 1/2 lbs sweet potatoes, washed, peeled and cut into chunks
- 1 lb onion, cut into chunks
- 3/4 cup brown sugar
- 1/4 cup honey
- 2 teaspoons cinnamon
- 2 cups orange juice
- 1/2 cup wine (I used a dry red, but sweet or dry, red or white will work)
- 1/2 cup broth (chicken or vegetable)
- 2 cups small dried apricots

- 2 lbs ground beef or other meat
- 1 can (28 Oz) Tomato sauce or crushed tomatoes
- 1 can water or beer
- 1 can pinto beans
- 1 can kidney beans
- 1 can Black beans
Pistachio Crusted Salmon

Heat oven to 425 degrees. Line a cookie sheet with heavy duty foil and spray with olive oil spray
- 4 4oz salmon fillets
- l/2 cup unsalted pistachios chopped
- 1/3 cup breadcrumbs
- 2 Tbs. grated Parmesan cheese
- 1-2 teaspoons of olive oil to make mixture crumbly
- 2 Tbs Dijon mustard

- 2 peppers (any color, red, yellow, orange, green)
- 1 crookneck squash
- 1 zucchini squash
- 2 lg sweet onions (or 1 lg regular or red)
- 1 bunch asparagus
- 3 handfulls of bean sprouts
- 1/4 cup soy sauce (I use Soy Vey)
- 1 tsp sesame oil
- 1 Tbsp vegetable oil
- 1 Tbsp chopped ginger
- 1 Tbsp 3 spice powder
