4oz salmon fillets
l/2 cup unsalted pistachios chopped
Tbs. grated Parmesan cheese
teaspoons of olive oil to make mixture crumbly
Tbs Dijon mustard
Heat oven to 425 degrees. Line a cookie sheet with heavy duty foil and spray with olive oil spray. Mix pistachios breadcrumbs, Parmesan cheese and olive oil together. Spread the salmon with the Dijon mustard and then dip them into the nut mixture coating generously. Press the nuts into the fish and place on the cookie sheet nut side up. Bake 10-12 minutes until done depending on the thickness of the fish.
