Lemon Zucchini Bread

- 1 1/3 cups sugar

- 1/2 cup buttermilk
- zest of 1 lemon
- 1 cup grated zucchini
- 1 cup powdered sugar
- 2 TB lemon juice
- 1 TB milk
Pumpkin Torte

This beautiful layered cake has a creamy filling with a mild pumpkin flavor and a little spice
- 1 package (18-1/4 ounces) yellow cake mix
- 1 can (15 ounces) solid-pack pumpkin, divided
- 1/2 cup milk
- 4 eggs
- 1/3 cup canola oil
- 1-1/2 teaspoons pumpkin pie spice, divided
- 1 package (8 ounces) cream cheese, softened
- 1 cup confectioners' sugar
- 1 carton (16 ounces) frozen whipped topping, thawed
- 1/4 cup caramel ice cream topping
- 1/3 cup chopped pecans, toasted
Swirl Bars

1. Heat oven to 350. Coat 13x9 pan with nonstick spray
- Icing:
- 1/2 C butter, softened
- 1/2 C sugar
- 1/2 C b. sugar
- 1/2 C creamy peanut butter
- 1/2 t vanilla
- 1 C flour
- 1 C quick cook oats
- 1/4 t salt
- 6 oz chocolate chips
- 1 C p. sugar
- 1/4 C peanut butter
- 3 T milk
Wild Rice and Chicken Casserole

Combine all ingredients and bake at 350 degrees for 1 hour
- 1 pkg Uncle Bens Wild Rice Mix (cooked)
- 1 C diced celery
- 1 small onion chopped
- 1 can cream of mushroom soup
- 1 can water chestnuts (optional)
- 1 C sour cream
- 1/2 C grated cheddar cheese
- 2 C chicken, cut up
Comfort Breakfast Bake

1. Mix your eggs and milk in a large bowl
- 5 eggs
- 1/4 cup milk
- 16 oz refrigerated breakfast biscuits (I used the Pillsbury flakey kind)
- 4 scallions (green onions, spring onions, whatever you prefer to call them)
- 1 cup shredded extra sharp cheddar cheese
- If you’re into the meats – cooked center cut bacon or cooked sausage
- 11 ×17 pan, sprayed with cooking spray (Note: I think a 9×13 works better, but it might need to bake a little longer)
Chicken Parmesan Casserole

Preheat oven to 350º F and lightly grease a 9×13-inch baking dish with non-stick spray
- 1 (28 oz.) jar marinara sauce
- 3 cups cooked chicken, cubed
- 2 1/2 cups garlic croutons, semi-crushed
- 1 1/2 cup mozzarella cheese, grated
- 1/2 cup parmesan cheese, grated
- 1/3 cup fresh basil, finely chopped
- 1 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes, or to taste
- kosher salt and freshly ground pepper, to taste
Zucchini Lasagna

Cook the ground beef, onion and bell pepper in a dutch oven or large skillet over med heat
- 1 lb of 97% fat free ground beef
- 1/2 medium onion, diced
- 1/4 red bell pepper, diced
- 2 cloves garlic
- 1 28oz can of diced tomatoes
- 1 can 8oz tomato sauce
- 1 tablespoon of fresh oregano, chopped (or 1 teaspoon dried oregano)
- 2 tablespoons of fresh basil, chopped (or 2 teaspoons dried)
- 1 carrot
- 4 small zucchini, thinly sliced lengthwise
- 1 cup of low fat ricotta cheese
- 1/2 cup of low fat mozzarella cheese + 1/4 cup for topping
- 2 egg whites
- 1 package frozen spinach, thawed and drained completely
Bubble Up Pizza Casserole

You can add any other Veggie Toppings (mushrooms, peppers, olives, any of your favorites
- 1 pound Lean Ground Beef
- 1 whole Onion, Chopped
- 2 cups Spaghetti Sauce (whatever Kind You Like)
- 1 can (8) Pillsbury Reduced Fat Grands Biscuits (quartered)
- 1 cup Part Skim Milk Mozzarella Cheese, Shredded
- 1 clove Garlic, Minced
Sugar Cookie Tacos

1. Preheat oven to 350. grease 2 baking sheets
- 1 Package 18oz refrigerated sugar cookie dough
- 2 tablespoons cinnamon
- 1 cup whipping cream
- 1/4 cup sugar
- 2 cups of your favorite fruit cut-up
Baked Breakfast Fondue

Layer cubed bread in bottom of greased 9x13 pan
- 8 slices cubed bread
- 2 C shredded cheese
- 2 1/2 # browned sausage
- 4 beaten eggs
- 1/2 t. salt
- 3/4 t mustard
- 2 C milk
- 1 can cream of chicken soup
- 1/2 C milk
