Mexican Soup

1. Heat oil in 4 qt saucepan over medium heat
- 2 t oil
- 1 small onion, chopped
- 1 large sweet potato, peeled and cut into 1/2 in pieces
- 2 cans chicken broth (14.5 oz each)
- 1/2 t ground cumin
- 1 can corn niblets, drained
- 1 C mild or medium salsa
- 1 can tomato sauce (8 oz)
- 1 can black beans, rinsed and drained (15 oz)
- Garnish: sour cream and cilantro (optional)
Creme De Menthe Cake

1. Mix cake as directed and add creme de menthe
- Cake:
- 1 white cake mix (mix as directed on pkg)
- 1/2 C Creme De Menthe syrup
- Filling:
- 1 8 oz jar of fudge topping
- Frosting:
- 1- 8 oz. carton of cool whip
- 1/2 C Creme De Menthe
Ali's Overnight Lettuce Salad

Place in large bowl in order given
- 1 head lettuce (or 2 1/2 lbs shredded lettuce)
- 1 head cauliflower
- 2 C mayo mixed with: 1 pkt Hidden Valley Garden Vegetable
- 1 med onion chopped
- 1 lb bacon fried and crumbled
- 1/3 C grated Parmesan cheese
- 1/2 C white sugar
White Chocolate Peppermint Cake Mix Cookies

1.Preheat oven to 350 degrees
- 1 box white cake mix (not yellow)
- 1/3 cup oil
- 3 egg whites
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar
- 4 large candy canes, or a dozen small ones, broken into pieces (put candy into a gallon-sized baggie, seal, and break into pieces with a mallet or frying pan)
- 1/2 cup, white chocolate chips
Chicken Spaghetti

Preheat oven to 350 degrees
- 8 ounces angel hair pasta
- 2 cups chopped, grilled chicken or 1 large can of chicken
- 1 can (10 3/4 ounces) cream of mushroom soup (98% fat free or regular)
- 1 can (10 3/4 ounces) cream of chicken soup (98% fat free or regular)
- 1 can (10 ounces) Rotel diced tomatoes and green chiles, undrained
- 8 ounces sour cream
- Sprinkling of Parmesan or Mexican-blend cheese

- 3 T butter
- 1 pkg (10.5 oz) miniature marshmallows
- 1/2 C peanut butter
- 5 C cheerios
- 1 C m&m's or raisins (optional)

Beat cream cheese til smooth
- 8 oz cream cheese, softened
- 1/3 C salsa
- 1/4 C chopped green onion
- 1/2 t garlic salt
- 1/2 t chili powder
- 12 (6") flour tortillas

German Chocolate Upside Down Cake

1. Heat oven to 375 degrees
- Frosting:
- 1 can coconut pecan frosting
- Filling:
- 1- 8 oz. pkg cream cheese
- 1 egg
- 1 C powdered sugar
- Cake:
- 1 Pkg German Chocolate cake mix
- 1 1/4 C water
- 1/3 C oil
- 3 eggs
Chicken Tortilla Soup

Add all ingredients in crock pot
- 2 cans milk enchilada sauce
- 2 cans cream of chicken soup
- 2 cans nacho fiesta cheese soup
- 2 cans milk
- 2-3 C cooked chicken
- tortilla chips
- Monterey Jack cheese
Better Than Almost Anything Cake

1. Heat overn to 350 degrees
- 1 pkg German Chocolate cake mix
- water, oil and eggs as called for on cake mix pkg directions
- 1 can sweetened condensed milk
- 1 jar caramel, butterscotch or fudge topping
- 1 container whipped topping
- 1 bag toffee chips or bits
