Out of Season Peach Cobbler

Preheat oven to 350 degrees
- 1 stick butter
- 1 1/2 cups sugar
- 1 cup flour
- 1 1/2 teaspoons baking powder
- 3/4 cup milk
- 1 can (30 ounces) sliced peaches in syrup
- 1 teaspoon cinnamon
- 1/3 teaspoon nutmeg
Krum Kaka

Mix first 5 ingredients. Beat eggs and add to above
- 1/2 C melted butter
- 1 C white sugar
- 1 small Carnation milk (2/3 C)or 1 C cream
- 1 1/2 - 2 C C flour
- 3 eggs, beaten
Zucchini Gratin

1.Preheat the oven for 400 degrees F
- 4 tablespoons butter
- 4 large zucchini, sliced
- 4 medium shallots, minced
- 2 teaspoons garlic, minced
- 1 cup heavy cream
- 2/3 cup cheddar cheese
- 1/3 cup Parmesan cheese
- 1/4 teaspoon oregano
- Salt and pepper to taste
- Green onions, sliced, for garnish
Caprese Salad

1.Cut the tomatoes and mozzarella into slices about ¼ inch thick 2
- 1 ripe tomato, any variety (preferably locally grown or home grown)
- Fresh mozzarella cheese (if you can swing it the more expensive stuff is worth it…especially the balls of mozzarella floating in water)
- A handful of fresh basil leaves
- Decent quality balsamic vinegar
- Salt and pepper, to taste
- 1 serving of basil pesto (recipe below)
Toffee Butter Crunch

In large saucepan, melt butter, add water, sugar and syrup
- 1 C butter
- 1 1/3 C sugar
- 3 T water
- 1 T light corn syrup
- 1 C coarsely chopped almonds
- 4-4 1/2 oz milk chocolate candy bars melted
- 1 C finely chopped blanched almonds
Sopapilla Cheesecake

Unroll and spread 1 can crescent rolls on bottom of un-greased 9×13 pan
- 1/4 cup butter (melted)
- 2 (8oz) packages cream cheese (softened)
- 2 cans Pillsbury crescent rolls
- 1 teaspoon vanilla
- Cinnamon & sugar (1 tablespoon cinnamon to 4 tablespoons sugar)
- 1 cup sugar
Orange Zucchini Cake

Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 1/2 teaspoon grated orange peel
- 1 cup grated zucchini
- 1/2 teaspoon nutmeg
- 1/2 cup chopped walnuts
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1/2 cup raisins
- Icing
- 8 oz softened cream cheese
- 2 teaspoon softened butter
- 1 teaspoon grated orange peel
- 2 cups powdered sugar
- 1/2 tsp orange extract
- Mix first 4 ingredients well.
- Add milk if need to thin.
- Spread on cooled cake.
Taco Soup

Brown g. beef and drain. Add remaining ingredients and stir
- 1 # ground beef
- 1 15 oz. can kidney beans (or black beans- my preference!)
- 1 can (11-15 oz. whole kernel corn, drained
- 1 can (10 oz) Rotel tomatoes
- 1 envelope taco seasoning
- 1 (28 oz) can diced tomatoes
- 1 small can (4 oz) chopped green chilies
- 1 can (15 0z) pinto beans
- 1 envelope Hidden Valley Ranch dressing mix
- crushed tortilla chips
New England Clam Chowder

Brown bacon and onion. Add celery, potatoes, carrots and water
- 4 strips bacon
- 1/3 C chopped onion
- 1/4 C diced celery (optional)
- 2 C diced potatoes
- 1/4 C diced carrots
- 1 C water
- 1 t salt
- 1/8 t pepper
- 2 C milk
- 7 1/2 oz chopped clams
Easy Shepherd's Pie

step 1 BROWN meat in large skillet; drain
- 1 lb. ground beef
- 2 cups hot mashed potatoes
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
- 1 cup KRAFT Shredded Cheddar Cheese, divided
- 2 cloves garlic, minced
- 4 cups frozen mixed vegetables (peas, carrots, corn and green beans), thawed
