Beef Stew in Pumpkin

Heat 2 tablespoons oil in a large saucepan over medium-high heat
- 2 pounds beef stew meat, cut into 1 inch cubes
- 3 tablespoons vegetable oil, divided
- 1 cup water
- 3 large potatoes, peeled and cubed
- 4 carrots, sliced
- 1 large green bell pepper, chopped
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1 (14.5 ounce) can whole peeled tomatoes, chopped
- 2 tablespoons beef bouillon granules
- 1 sugar pumpkin
Dulce de Leche Coffee

Add Dulce de Leche to the very hot coffee; stir until completely dissolved and combined
- 4 cups Strongly Brewed Good Coffee
- 6 ounces, fluid Dulce De Leche (*see Note)
- 6 Tablespoons Kahlua, More If Preferred
- 1 cup Heavy Cream
- 2 Tablespoons Sugar
- 6 Tablespoons Chocolate, Grated

1. Pre-heat the oven to 375
- 1 1/2 t chili oil (found near the Asian ingredients)
- 1/2 lb 95% lean ground beef
- 1 T taco seasoning
- 3/4 c canned black beans, drained and rinsed
- 16 wonton wrappers (found in the produce section)
- 5 T + 1 t of queso dip or salsa con queso (I used Wholly Guacamole Queso Blanco)
- 1 c chunky salsa (I used Wholly Guacamole Medium Salsa)
- 1 c reduced fat shredded Mexican cheese (I used Weight Watchers brand)

1) Preheat the oven to 400F
- CORNMEAL BASE
- 1 cup milk
- 1/3 cup cornmeal
- 1/2 teaspoon salt
- SPICY RED PEPPER VERSION
- 1/3 cup diced onion
- 1/3 cup diced roasted red peppers
- 1/3 cup diced pickled jalapenos
- 1 cup shredded sharp cheddar cheese
- 2 eggs, lightly beaten
- CREAM CHEESE AND CHIVE VERSION
- 1/2 cup cream cheese, softened
- 1/2 cup fresh chives, minced
- 2 eggs, lightly beaten
- 1 tablespoon butter, for topping

Preheat the oven to 375 degrees F
- 1 (8-ounce) package light cream cheese, at room temperature
- 1 large Granny Smith apple, cored and minced
- 3 large scallions, roots sliced off, green and white parts minced finely
- Kosher salt and freshly ground black pepper
- 20 jalapenos
- 20 strips thin-sliced bacon, chopped in half
- Special equipment: 40 toothpicks
All-American Potato Salad

Working in 3 batches, cut potatoes into 3/4-inch cubes and steam until tender, about 10 minutes
- 4 1/2 pounds red-skinned potatoes
- 1/3 cup canola oil
- 1/4 cup cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/4 cups mayonnaise
- 1/4 cup dill pickle juice
- 3 tablespoons coarse-grained Dijon mustard
- 6 large hard-boiled eggs, chopped
- 1 1/2 cups finely chopped green onions
- 1 cup finely chopped celery
- 3/4 cup chopped fresh parsley
- 1/2 cup chopped dill pickle
- 1/2 cup sliced pimiento-stuffed green olives

In a medium skillet, melt 2 tablespoons of the butter over medium-low heat
- 1 stick butter
- 1 whole large onion, halved and sliced
- 1 1/2 pounds ground beef
- 5 dashes Worcestershire sauce
- 8 slices rye bread
- 8 slices Swiss cheese
Giddy-Up Steak with Onion-Date Compote

For the rub: In a small bowl, stir together the rub ingredients, making sure to smooth out any brown sugar nuggets
- Rub:
- 2 tablespoons chile powder
- 1 tablespoon ground coffee
- 1 1/2 tablespoons brown sugar
- 1/2 teaspoon coriander powder
- 1/2 teaspoon coarse ground black pepper
- 1/2 teaspoon kosher salt
- 1/4 teaspoon garam masala
- 1 (2-pound) flank steak
- Compote:
- 2 tablespoons olive oil
- 4 large onions, sliced very thinly
- Kosher salt
- 4 dates, pitted and minced
- 1 tablespoon balsamic vinegar
- 1/2 cup water
- Vegetable or canola oil, for greasing

- 1/2 c. brown sugar
- 2 eggs
- 1 c.ashed bananas ( 3 bananas)
- 3/4 c. honey
- 1 tsp.vanilla
- 1-1/2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 c. oatmeal
- 3/4 c. craisins
Spinach, Pear and Green Bean Salad with Riesling Dressing

Preparation Purée diced pear, Riesling, lemon juice, shallot and Dijon mustard in food processor until smooth
- 1/2 cup diced peeled cored ripe Bartlett pear
- 6 tablespoons medium-dry Riesling
- 3 tablespoons fresh lemon juice
- 1 tablespoon chopped shallot
- 1 teaspoon Dijon mustard
- 1/2 cup vegetable oil
- 1/2 pound haricots verts or small green beans, trimmed
- 6 cups (packed) baby spinach leaves (about 6 ounces)
- 3 ripe Bartlett pears, quartered, cored, cut into 1/4-inch-thick slices
- 3/4 cup crumbled blue cheese
- 3/4 cup walnuts, toasted
