Moroccan Meatloaf with Lemon Honey Gravy and Zucchini Couscous

Preheat the oven to 325 degrees F
- 1 1/2 pounds ground lamb or chicken
- Salt and freshly ground black pepper
- 1 small onion, peeled
- 4 cloves garlic, finely chopped
- 2/3 cup panko bread crumbs
- 2 tablespoons extra-virgin olive oil
- 1 large egg, beaten
- 2 lemons, zested and juiced
- 1/4 cup pitted, finely chopped green olives
- 1 tablespoon ground cumin, a scant palmful
- 1 teaspoon turmeric, 1/3 palmful (for chicken only)
- 2 pinches ground cinnamon
- A handful flat-leaf parsley, finely chopped
- 2 handfuls fresh mint leaves, finely chopped
- 4 tablespoons butter
- 1/2 pound firm zucchini, chopped into small dice
- 2 1/2 cups chicken stock
- 1 cup couscous
- 2 tablespoons all-purpose flour
- 1 tablespoon Worcestershire sauce
- 1/4 cup honey
Basic Pizza Sauce

1. Heat oil in a medium sized saucepan
- 2 tablespoons olive oil
- 1 cup finely chopped yellow onions
- 2 cloves of garlic, finely chopped
- 2 cans (28 ounces each), drained and crushed Italian plum tomatoes
- 4 tablespoons tomato paste
- 3 tablespoons fresh lemon juice
- 1 teaspoon dried basil
- Pinch of ground allspice
- Salt and black pepper, to taste
- Pinch of hot red pepper flakes
- 2 tablespoons chopped Italian parsley
Grilled Onion Salad Recipe

1 Peel the onions, then cut in half from root to top
- 3 pounds medium red onions
- 2 Tbsp olive oil
- Kosher salt
- 1 teaspoon mustard
- 2 teaspoons minced shallot
- 1 teaspoon salt
- 1 Tbsp minced rosemary
- 1 garlic clove, minced
- 3 Tbsp white wine or cider vinegar
- 1/2 cup olive oil
Tomato Soup -Salt-free

In a large soup pot, heat oil over low-medium heat, mix in vegetables and cook until tender
- 2 tbsp. vegetable oil
- 1 small onion, chopped
- 2 celery stalks, chopped
- 1 carrot, diced
- 1 can (28oz/800g)no salt whole tomatoes
- 1 can (28oz/800g) no salt crushed tomatoes
- tsp. small can of tomato paste
- 2 tsp. no salt added chicken stock
- 1 cup. half and half
- Pepper to taste
Brussels Sprouts with Balsamic and Cranberries

- 3 pounds Brussels sprouts
- 1/2 cup olive oil
- 1 cup sugar
- 3/4 cup balsamic vinegar
- 1 cup dried cranberries
