Zucchini Bread: Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven
- Garnish:
- 1/2 cup (50 grams) pecans or walnuts, toasted and coarsely chopped
- 1 cup shredded raw zucchini (1-2 zucchini)
- 1/2 cup peeled and grated raw apple, (about 1 large apple)
- 1 1/2 cups (195 grams) all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup (120 ml) safflower, corn, or canola oil
- 1 cup (200 grams) granulated white sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup shredded coconut (sweetened or unsweetened)
- Cream Cheese Frosting: (optional)
- 1/4 cup (56 grams) unsalted butter, room temperature
- 4 ounces (1/2 cup) (110 grams) cream cheese, room temperature
- 3 tablespoons confectioners' (powdered or icing) sugar
- 1/2 teaspoon pure vanilla extract
- Toasted coconut (sweetened or unsweetened)
Ham and Cheese Rye Muffins

These muffins make a meal when served with a green salad or a bowl of soup
- 1 1/4 cups all-purpose flour
- 1/3 cup rye flour
- 2 teaspoons baking powder
- 2 teaspoons sugar
- 1/4 teaspoon caraway seed
- 1/4 teaspoon onion salt
- 1 beaten egg
- 3/4 cup milk
- 1/4 cup cooking oil
- 2/3 cup finely chopped fully cooked ham (3 ounces)

Baileys Cream Filling & Frosting

Filling: Beat three ingredients together with a fork until smooth
- Filling:
- 4 oz. softened, unsalted butter (1/2 stick)
- A nice splash of Baileys (maybe 4 T.)
- 1 - 1 1/2 C. powdered sugar to get a good
- consistency
- Frosting:
- 4 oz. (1/2 stick) softened unsalted butter
- 8 oz. cream cheese, softened
- 3-4 T. Baileys
- 3 C. powdered sugar
Stuffed Flounder

- 1 pound fresh spinach, well washed
- 1 medium carrot, scraped and shredded
- 1 tablespoon grated ginger
- 5 tablespoons butter, melted
- 4 flounder fillers, each weighing 5 to 6 ounces
