- 2 cups all-purpose flour
- 1/4 cup packed light brown sugar

- 1/2 cup plus 1 teaspoon creamy peanut butter
- 1 cup milk
- 1 egg, lightly beaten
- 3 tablespoons butter, melted
- 1/4 cup thick jam, such as seedless raspberry
- 1/3 cup honey-roasted peanuts, chopped
- Compound butter, recipe follows
- 1 stick butter, room temperature
- 5 tablespoons of your favorite fruit preserve
Chicago-Style Deep-Dish Pizza

1) To make the crust: Mix the dough ingredients, and knead to make a smooth crust
- Crust
- 4 cups King Arthur Unbleached All-Purpose Flour
- 3 tablespoons yellow cornmeal
- 1 3/4 teaspoons salt
- 2 3/4 teaspoons instant yeast
- 2 tablespoons olive oil
- 4 tablespoons butter, melted
- 2 tablespoons vegetable oil or salad oil
- 1 cup + 2 tablespoons lukewarm water
- Filling
- 3/4 lb. mozzarella cheese, sliced
- 1 lb. Italian sweet or hot sausage,
- cooked and sliced; or about 3
- cups of the sautéed vegetables
- of your choice
- 28 -oz. can plum tomatoes, lightly
- crushed; or 28-ounce can diced
- or chopped tomatoes
- 2 to 4 garlic cloves, peeled and
- minced, optional
- 1 tablespoon sugar, optional
- 1 to 2 teaspoons Pizza Seasoning or
- mixed dried Italian herbs
- (oregano, basil, rosemary),
- to taste
- 1 cup freshly grated Parmesan or
- Asiago cheese
- 2 tbsp. olive oil, to drizzle on top
Frito Frittata

Yields: 6 Preparation Position a rack in the center of the oven and preheat it to 400°F
- 1 tablespoon EVOO – Extra Virgin Olive Oil or vegetable oil
- 1/3-pound ham steak, diced (about 1 cup)
- 3 tablespoons butter
- 1 small onion, chopped
- 1/2 small red bell pepper, seeded and finely chopped
- 2 Serrano chile peppers or 1 large jalapeño pepper, thinly sliced
- 2 cloves garlic, finely chopped
- Salt and pepper
- 1 small vine-ripe tomato, seeded and chopped
- 2 tablespoons chopped fresh cilantro or parsley
- 1 1/3 About 1 1/3 cups Fritos corn chips, lightly crushed (about 3 big handfuls)
- 10 eggs, lightly beaten
- 1 tablespoon hot sauce, such as Frank's® RedHot®
- 4 ounces pepper jack, diced (about 1 cup)
Chicken Tortilla Soup

In a large saucepan heat the vegetable oil
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 tablespoons minced garlic
- 2 jalapenos, finely diced
- 6 cups low-sodium chicken broth
- 1 (14.5-ounce) can fire roasted diced tomatoes
- 1 (14.5-ounce) can black beans, rinsed and drained
- 3 chicken breasts, boneless and skinless
- 2 limes, juiced, plus wedges for garnish
- Salt and freshly ground black pepper
- 1 cup roughly chopped fresh cilantro leaves
- 1 (8-inch) flour tortilla, grilled, cut into thin strips
- 1 avocado, pitted, sliced
- 1 cup shredded Monterrey cheese

1. Place water in large bowl; sprinkle with yeast and sugar

- 1 1/2 cups lukewarm water (85°F. to 95°F.)
- 1 (1/4-oz.) pkg. active dry yeast (2 1/4 teaspoons)
- 2 tablespoons sugar
- 2 cups whole wheat flour
- 1 tablespoon white vinegar
- 1 teaspoon salt
- 1 1/2 cups bread flour
- FILLING
- 2 tablespoons butter or olive oil
- 1/2 cup finely chopped onion
- 1 garlic clove, minced
- 1 tablespoon finely chopped parsley
- 1/2 teaspoon salt
- 2 cups lightly packed fresh baby spinach

Preheat oven to 400 degrees F
- 1 1 1 lemon
- 1/2 1/2 1/2 cup sugar
- 1 1 1 cup nonfat buttermilk (see Tip)
- 1/3 1/3 1/3 cup canola oil
- 1 1 1 large egg
- 1 1 1 teaspoon vanilla extract
- 1 1 1 cup white whole-wheat flour or whole-wheat pastry flour (see Shopping Tip)
- 1 1 1 cup all-purpose flour
- 2 2 2 teaspoons baking powder
- 1 1 1 teaspoon baking soda
- 1/4 1/4 1/4 teaspoon salt
- 1 1/2 1 1/2 1/2 cups fresh or frozen (not thawed) raspberries
- 1 1 buttermilk? Mix 1 tablespoon lemon juice into 1 cup milk.
Sesame Chicken

- 3 boneless, skinless chicken breast halves, nearly thawed
- 2 tablespoons soy sauce
- 2 tablespoons orange marmalade
- 1 tablespoon sweet rice cooking wine (aji mirin), or white wine
- 1/2 teaspoon crushed red pepper flakes
- 1/2 cup flour
- 2 tablespoons sesame seeds
- 3 tablespoons butter, melted
- Rice, for serving
