Beef Enchiladas

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 4 1/2 oz. can diced green chili peppers, drained
  • 1 tablespoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 8 corn or flour tortillas
  • 2 14 oz. cans enchilada sauce
  • 8 oz. pkg. shredded mild cheddar cheese

Step 1

In a large skillet cook ground beef, onion, and garlic until meat is brown and onion is tender. Drain off fat. Stir in diced green chili peppers, chili powder, ground cumin, salt, and ground black pepper. Heat through. Set aside.

Wrap tortillas tightly in foil. Heat in a 350* oven about 10 minutes or until heated through.

Spoon about 1/3 cup of the meat mixture down the center of each tortilla. Roll tortillas up and place in a large baking dish, seam side down. Pour enchilada sauce over tortillas. Bake in a 350* oven for 30 minutes or until heated through. Sprinkle shredded cheese over enchiladas during last 5 minutes of baking.
