- 3/4 cup oil
- 1 1/2 cups sugar
- 2 teaspoons vanilla
- 2 cups zucchini, skinned & grated
- 1 cup raisins
- 1 8 oz. can crushed pineapple in juice
- 3 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup chopped nuts (optional)
Texas Caviar

Best when made a couple of days ahead of time
- 1/2 Green Pepper - diced
- 1/2 Red Pepper - diced
- 1/2 Yellow or Orange Pepper - Diced
- 1/2 Small onion - chopped
- 1 Can Corn - drained
- 1 Can black Eyed Peas-Drained
- 1 small can mild green chilis - chopped 4 oz
- 1 small jar Pimentos-chopped (2 oz)
- 1/2 Stalk celery chopped (Optional)
- Sauce
- 1 tsp. salt
- 1 tsp. water
- 1/2 tsp. pepper (I use white pepper)
- 3/4 cup cider vinegar
- 3/4 cup sugar
- 1/2 cup vegetable or canola oil
Slow Cooker Macaroni and Cheese

1. Spray 3½ to 4-quart slow cooker with cooking spray
- 12 ounces uncooked elbow macaroni
- 4 tablespoons butter, cut into cubes
- 1 can (12 ounces) evaporated milk
- 1 1/2 cups half & half
- 3 cups (12 ounces) shredded sharp cheddar cheese
- 8 ounces Velveeta cheese, cut into cubes
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Cranberry Marshmallow Salad

- 2 cups fresh cranberries chopped
- 4 1/2 cups miniature marshmallows
- 1/2 cup sugar
- 1/4 cup chopped apple (about 1/2 an apple)
- 1-8 oz container cool whip
Cathie's Chili

Brown ground meat with onion and green pepper, drain
- 2 lbs ground meat
- 1 onion
- 1 green pepper
- 1 Large can diced tomatoes
- 1 large can crushed tomatoes
- 1 can beans for chili (I use mild)
- 1 can hunts sauce for chili
- 1 can delmonte diced tomatoes for chili
- 1 TBL chili powder
- Frozen corn

Braised Country-Style Pork Ribs

Preheat the oven to 350 degrees F
- 3 pounds bone-in country-style pork ribs
- Kosher salt and freshly ground black pepper
- 3 tablespoons vegetable oil
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1/4 cup apple cider vinegar
- 1 teaspoon crushed red pepper flakes
- 2 bay leaves
- 2 1/2 cups chicken stock
- Creamy Polenta, recipe follows
- 2 tablespoons chopped fresh parsley, for garnish
- Vegetable cooking spray
- 1 1/3 cups half-and-half
- 1 cup milk
- 2 tablespoons butter
- 1/3 cup coarse polenta, or corn grits
- Kosher salt
- 1/2 cup grated Parmesan

- 3 Cups Torellini - thawed
- 1 6 ounce jar marinated artichoke heart (drained) - reserve marinade
- 2 6-inch zucchini squash quartered & sliced 1/2 inch thick
- 4 ounces morzzarella cheese - cut into 1/2 inch cubes
- 1 cup shredded carrots
- 3 ounces salami or pepperoni or summer sausage cut into 1/4x2 strips
- 1/4 cup freshly grated Parmesan cheese
