Copycat Recipe of Portillo's Chopped Salad by Christine Trevino

- I tripled the recipe for my copycat Portillo’s Chopped Salad
- Ingredients
- 4 cups cooked Ditalini pasta
- 3 cups chopped romaine lettuce
- 3 cups chopped iceberg lettuce
- 2-1/2 cups chopped red cabbage
- 2 fresh tomatoes (diced)
- 1 cup diced green onions
- 1 cup chopped bacon (I used Turkey Bacon)
- 4 oz. Gorgonzola cheese (you could add up to 8 oz. if you REALLY like Gorgonzola)
- Sweet Italian Dressing to taste (recipe above)
Lamb Chops with Balsamic Reduction

In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper
- 3/4 teaspoon dried rosemary
- 1/4 teaspoon dried basil
- 1/2 teaspoon dried thyme
- salt and pepper to taste
- 4 lamb chops (3/4 inch thick)
- 1 tablespoon olive oil
- 1/4 cup minced shallots
- 1/3 cup aged balsamic vinegar
- 3/4 cup chicken broth
- 1 tablespoon butter

- SAUCE:
- 1 1/2 pounds boneless, skinless chicken breast tenders
- 1 cup buttermilk, or milk mixed with 1 spoonful vinegar
- 1 cup panko breadcrumbs
- 1/4 cup cornmeal
- 1 tablespoon olive oil
- Salt and pepper
- 3 to 4 cups broccoli florets
- 3 cloves garlic
- 1 piece fresh ginger, 1-inch
- 3/4 cup light soy sauce
- 1/2 cup water
- 1/2 cup hoisin sauce
- 2 tablespoons honey
- 1 tablespoon white vinegar
- 2 teaspoons sambal oelek
Chocolate Chip Pan Cookies

Preheat oven to 375 degrees
- 2 1/2 cups unsifted flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter (softened)
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 12 oz. pkg chocolate chips
- 2 eggs
- 1 cup chopped nuts (optional)

Preheat oven to 350 degrees
- Topping:
- 2 eggs
- 2/3 cup white sugar
- 4 Tbsp pineapple juice
- 2/3 cup all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup butter (1/2 stick or 4 Tbsp)
- 2/3 cup brown sugar (packed)
- 1 -can pineapple rings
- 6 -maraschino cherries
Grilled Cheese with Tomato and Pesto

Instructions Drizzle a frying pan or panini press with olive oil
- Bread (I used white, but the original recipe uses sourdough which I bet is scrumptious)
- Mozzarella cheese (that you can slice to desired thickness)
- Tomatoes
- Pesto sauce (I used store bought for convenience, but this link has a recipe)
- Salt and pepper
- Olive oil
- Turkey (optional)

- 1 package frozen strawberries 16 oz, partially thawed
- 2 cups cold water

- 1 - 9 1/4 oz bag Frito corn chips
- 6 cups chex cereal- combination of rice, wheat & corn
- 2 cups pretzels - sticks or small pretzels
- 2 cups mixed nuts
- 1/2 cup butter
- 1 TBL Worcestershire sauce
- 2-3 dashes hot pepper sauce (Tabasco)
- 1 tea. salt
- 1/4 tea. garlic powder
