OREO-Pumpkin Cookie Balls

MIX cream cheese and cookie crumbs until blended
- 6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
- 1 pkg. (15.25 oz.) OREO Peanut Butter Creme Cookies, finely crushed
- 3 pkg. (4 oz. each) BAKER'S White Chocolate, broken into pieces, melted
- 1 cup orange colored sugar
- 10 pretzel sticks, each broken into 4 pieces
Mini Coffee Cake Muffins

Preheat oven to 350 degrees
- For the muffins
- 1 cup flour
- 1/4 cup + 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup butter - melted
- 1 egg
- 1/4 cup + 2 tablespoons milk
- 1 teaspoon vanilla
- For the crumble topping
- 2 tablespoons flour
- 1/3 cup sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons butter - melted
Confetti Egg Salad

Finely chop eggs. Add remaining ingredients and mix till well combined
- 4 Hard Cooked Eggs
- 1/4 of an English Cucumber, diced
- 1/4 of a Orange Bell Pepper, diced
- 1/4 cup Black Olives, chopped
- 4 slices Cooked Bacon, crumbled
- 1 Green Onion, chopped
- 2 oz. jar Pimentos, drained
- 2 Tablespoons Fage Greek Yogurt
- 1 Tablespoon Mayonnaise
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon Kosher Salt
- a few twists of Black Pepper
Cheeseburger Pie

Instructions Preheat oven to 400 degrees
- 1 1/4 pounds very lean ground beef (or ground sirloin or buffalo or even soy crumbles)
- 1 medium onion, diced
- Salt and freshly ground black pepper
- 1/4 cup ketchup, use low sugar Heinz if you can find it
- 1/3 cup original Bisquick baking mix
- 1 cup milk
- 2 eggs
- 4 ounces Cabot 70% Cheddar, shredded (Grating your own cheese is less expensive and no chemical additives. Use half of an 8 ounce bar of cheddar)
- Burger toppings - Ketchup, mustard, onion, and Wickles spicy pickle chips in my house

- 6 eggs, separated
- 1/2 tsp cream of tartar
- 6 ounces sour cream
- 1/2 tsp baking soda
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt
- 1/2 cup whey protein powder
Pistachio Kale Pesto with Zucchini Noodles + Cherries

- For the pesto:
- 3 medium-sized lacinato (dino) kale leaves, torn from the stem
- 1 small/medium garlic clove, peeled
- 1/2 cup packed basil leaves
- 1/2 cup roasted shelled pistachios, if salted nix adding salt to the recipe or very little to taste
- 1/2 lemon, zested
- 2 teaspoons lemon juice
- 1/3 + cup extra virgin olive oil
- Salt and pepper to taste
- For the dish:
- 4-5 small/medium zucchini, 1 1/2-inch diameter max
- Olive oil
- 1 cup pitted and chopped/sliced cherries
- Lemon zest and pistachios, to top

Peanut Butter Cup Cookies

Preheat oven to 375 degrees F (190 degrees C)
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup butter, softened
- 1/2 cup white sugar
- 1/2 cup peanut butter
- 1/2 cup packed brown sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 40 miniature chocolate covered peanut butter cups, unwrapped
Spiral Zucchini Salad

Mix all ingredients together in big bowl
- 2 zucchinis
- 1 cup quartered artichoke hearts, drained
- 10 cherry tomatoes, halved
- 3 thick slices of provolone cheese, cut into cubes
- 3/4 cup salami
- 1/2 small red onion, sliced thin
- 1/2 cup black olives, quartered
- 3/4 cup Italian dressing, or to taste
Ratatouille Boats

1. Pour olive oil in a large pot, over medium-high heat
- For Ratatouille:
- 3 cloves garlic
- 1 onion
- 1 eggplant
- 1 bell pepper
- 1 yellow squash
- 1 zucchini
- 5 tomatoes
- Salt to taste
- 1/2 tsp red pepper flakes
- 2 tsp fresh thyme
- 2 Tbsp. fresh parsley
- 2 Tbsp. fresh basil
- Additional Ingredients for the zucchini boats:
- 8 oz ball of fresh mozzarella + 6 whole zucchinis make 12 boats.
