Quinoa Stuffed Peppers

Place de-seeded, halved peppers in a dish and microwave 6 minutes
- 3 Bell Peppers
- 1 bag Path of Life Mediterranean Quinoa
- 1/2 cup Cottage Cheese
- 1 cup Cooked Sausage, crumbled
- 1/2 teaspoon Oregano
- dash Salt
- a few twists of Black Pepper
- 1/2 cup Colby-Jack Cheese, shredded
Chicken Parm Meatballs

This makes 12 large-ish meatballs
- 1 1/4 pounds ground chicken
- 1/2 cup breadcrumbs
- 2 tablespoons chopped onion
- 1 tablespoon chopped parsley
- 1/2 cup Pecorino (or Parm)
- salt to taste
- pepper to taste
- 1 clove garlic, minced
- 1 teaspoon fennel seeds
- 1 egg, whisked
- zest of half a lemon
- 3 tablespoons olive oil
- 1 14-ounce can storebought pizza sauce
- 4 about 4 ounces fresh mozzarella

- 1 lb. Italian Sausage (We use HOT for the spice, but sub in the meat you’d like best!)
- 20 oz. Frozen Three-Cheese Tortellini (We use Buitoni)
- 32 oz. Low Sodium Chicken Broth
- 2 Cans Diced Tomatoes – The kind that are seasoned with basil, garlic & oregano. If you don’t have the seasoned ones, you’ll need to add in your own seasonings.
- 8 oz. Cream Cheese or Neufchâtel Cheese – (We use the low fat kind when using cream cheese.)
- Grated Parmesan Cheese for topping!

- Starbucks coffee, black
- Chocolate Syrup
- 1/2 oz. (15ml) Cake Vodka
- 1/2 oz. (15ml) Baileys Irish Cream

Tropical Grilled Shrimp Salad

Preheat grill or grill pan to medium-high heat
- 1/4 cup olive oil
- 1 pound shrimp (peeled, tails on, deveined)
- 2 green bell peppers (1-inch squares)
- 2 red bell peppers (1-inch squares)
- 2 small red onions (peeled and cut in wedges)
- 1 pineapple (cored and sliced in 2-inch pieces)
- 2 mangos (peeled and cut in 2-inch pieces)
- 1 lime (juice and zest)
- 2 tablespoons honey
- 1/3 cup olive oil
- 3 tablespoons mint (chopped)
- 1/4 pumpkin seeds (toasted, for garnish)

- 1 c. firmly packed brown sugar
- 1/2 c. maple syrup
- 1/4 c. Dijon mustard
