cup quartered artichoke hearts, drained
cherry tomatoes, halved
thick slices of provolone cheese, cut into cubes
small red onion, sliced thin
cup black olives, quartered
cup Italian dressing, or to taste
Mix all ingredients together in big bowl. Tastes best if kept in refrigerator for 3-4 hours before serving. The dressing will soften the zucchini and soak into the salad.
