Bourbon Chicken-2

Place chicken breasts in a 9x13 inch baking dish
- 4 skinless, boneless chicken breast halves or
- 4 chicken thighs, skin removed
- 1 teaspoon ground ginger
- 4 ounces soy sauce
- 2 tablespoons dried minced onion
- 1/2 cup packed brown sugar
- 3/8 cup bourbon (or Jack Daniels)
- 1/2 teaspoon garlic powder or 5 garlic cloves, minved
Slow-Cooker Balsamic Chicken Caprese Recipe

Drizzle olive oil in the bottom of a 4-quart or larger slow cooker
- 2 Tbsp. extra-virgin olive oil
- 2 pounds boneless, skinless chicken breasts
- 1/2 tsp. kosher salt
- 1/2 tsp. freshly cracked black pepper
- 1 (14-ounce) can diced tomatoes
- 1/2 cup balsamic vinegar
- 3 cloves of garlic, minced
- 1 bay leaf
- 1 tsp. dried basil
- 1 small red onion, diced
- Shredded mozzarella cheese, for serving
- Thinly sliced fresh basil, for serving

Healthy and easy Green Spinach Smoothie recipe
- 1 cup unsweetened almond milk or any kind
- 1 large handful of organic baby spinach, washed
- 1/4 cup frozen mango chunks
- 1/4 cup frozen pineapple
- 1/2 of a banana, fresh or frozen
- 1 tablespoon flax meal, optional
- 1 tablespoon chia seeds, optional
- 1 scoop vanilla protein powder, optional

- 3 eggs, separated
- 3 ounces reduced-fat/fat-free cream cheese OR 3 tablespoons sour cream or ricotta cheese or cottage cheese or thick yogurt
- 1/2 teaspoon Splenda granular
- 1/8 teaspoon cream of tartar

Mix sugar with 3 cups hot water
- 3 cups sugar
- 9 cups water
- 2 cups fresh squeezed lemon juice
Lentil Chicken Salad

Mix till combined. Chill. Fridge any leftovers, tastes even better the next day
- 1 1/2 cups Cooked Lentils, chilled
- 1/2-3/4 cup Cooked Leftover Chicken, cubed
- 1/2 cup Bruschetta Sauce (Store Bought, Trader Joe's, Buitoni, any)
- 1/4 cup Feta Cheese, crumbled
- 2 Green Onions, diced
Chocolate Chip Coffee Cannoli Cream Tarts

Place muffin liners in cups of 1 set of the mini muffin pans
- 2 Quest Nutrition Chocolate Chip Cookie Dough Protein Bars
- 1/4 cup Ricotta Cheese
- 2-3 Tablespoons Coffee Protein Powder (I used Chike Nutrition High Protein Iced Coffee)
- 1 Tablespoon Sugar Free Torani Syrup (or sweetener of choice)
- a few Almonds for decorating

Pepperoni Pizza Mini Meatloaf

Saute onions till golden. Add garlic & seasonings and cook 1 minute more
- 1 Yellow Onion, diced
- 3 Green Onions, diced
- 3 cloves Garlic, minced
- 1 teaspoon Oregano
- 1/2 teaspoon Italian Seasoning
- 1/4 cup Italian Style Dry Bread Crumbs (or Oatmeal or Almond Meal)
- 1/4 cup Milk
- 1 1/4 pounds Ground Turkey, the average weight of 1 package
- 1/4 cup Storebought Bruschetta Sauce (fresh pasta section)
- 1 Egg, beaten
- 1/4 cup Pepperoni, chopped
- 1/2 cup Mozzarella Cheese, chunks (I used 3 cheesesticks)
- 1/2 teaspoon Kosher Salt
- a few twists of Black Pepper
- Olive Oil for sauteing
Bruschetta Bean & Chicken Salad

Slice the grilled chicken into strips
- 1 Foster Farms Simply Raised Chicken Breast, Grilled, Sliced
- 1/2 cup White Kidney Beans, rinsed and drained
- 1/2 cup Red Kidney Beans, rinsed and drained
- 1/2 cup Green Beans, rinsed and drained
- 1/2 cup Fresh Mozzarella Balls, halved
- 1/2 cup Grape Tomatoes, halved
- 1/4 cup Marinated Artichoke Hearts, chopped
- 1/2 cup Bruschetta Sauce (find it near fresh pasta in the supermarket)
- 1 teaspoon Oregano
- Salt and Pepper to taste
