This recipe slims down this fattening favorite by mixing in pumpkin and non-fat yogurt
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 3/4 tsp baking soda
- 1/4 tsp kosher salt
- 1 Tablespoon ground cinnamon
- 3 egg whites
- 3/4 cup canned 100% pumpkin puree
- 3/4 cup nonfat plain yogurt
- 2 Tablespoons packed brown sugar
- 2 teaspoons vanilla extract
- Icing: 4 ounces reduced-fat cream cheese (at room temp) + 1/4 cup pure maple syrup
- Optional Garnish: 1/4 cup pecans, toasted and roughly chopped, ground cinnamon.
No-Bake Chocolate-Swirl Cheesecake

Make slicing cheesecake easier by dipping your knife in water between cuts
- 1/2 cup finely crushed graham crackers
- 2 tablespoons butter, melted
- 1 envelope unflavored gelatin
- 3/4 cup fat-free milk
- 2 8 ounce packages reduced-fat cream cheese (Neufchatel), softened
- 1 8 ounce package fat-free cream cheese, softened
- 1 8 ounce carton fat-free sour cream
- 1/3 cup sugar
- 2 teaspoons vanilla
- 4 ounces dark chocolate, melted and cooled
- Fresh blackberries and/or raspberries (optional)
creamy pumpkin pasta

Yield: 6 servings Total Time:20 minutes
- 1 lb whole wheat penne
- 2 garlic cloves
- 2 Tbsp olive oil
- 1/2 cup pumpkin puree
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/2 cup milk, more if you like a thinner sauce
- 1 tsp celtic salt
- 1/2 tsp nutmeg
- 1 cup parmigiano reggiano, I used about 2 cups, we like cheese! You can also use Parmessan
- 1 tsp pepper flakes, optional.
Golden Milk

Combine all the ingredients, except honey in a saucepan
- Step 1: Turmeric Paste:
- 1/4 cup of turmeric powder
- 1/2 teaspoon of ground pepper
- 1/2 cup of filtered water
- Mix all ingredients in a small a small sauce pan and mix well. Turn the heat to medium high and stir constantly until the mixture is a thick paste. This does not take long so don’t walk away from the pan.
- Let this mixture cool and then keep it in a small jar in the fridge.
- Step 2: Golden Milk
- Ingredients:
- 1 cup of almond milk (hemp or coconut are also good options)
- 1 teaspoon coconut oil
- 1/4 teaspoon or more of turmeric paste
- –Honey
Key Lime Cheesecake

Your favorite key lime pie
- Crust:
- 2 cups graham cracker crumbs (from about 12 whole graham crackers)
- 1/4 cup packed brown sugar
- 1/2 teaspoon cinnamon, optional
- Pinch of salt
- 8 tablespoons unsalted butter, melted
- Cheesecake:
- 2-8 ounce packages cream cheese, room temperature
- 3/4 cup sugar
- 1 cup sour cream, room temperature
- 3 eggs, room temperature
- 2 tablespoons flour
- 3 tablespoons key lime juice (fresh or bottled if you can’t get key limes)
- Zest of two key limes (or regular limes if you can’t find key limes)
- 1/2 teaspoon vanilla extract
- Fresh whipped cream and/or lime curd for garnish
Honey Peanut Butter Popcorn Balls

- 9 cups organic popcorn
- 1/3 cup organic honey
- 1/3 cup organic unsweetened peanut butter

Be sure to soak the cashews overnight, or for at least 3 to 4 hours, so they’re ready when you need them
- For the toasted hazelnut crust:
- 3/4 c hazelnuts
- 1/4 c coconut oil
- 3 Tbsp maple syrup
- 1/4 tsp fine-grain sea salt
- 1/2 c gluten-free oat flour
- 1 c gluten-free rolled oats
- For the chocolate filling:
- 1 1/2 c cashews, soaked
- 2/3 c agave nectar, or 3/4 c pure maple syrup
- 1/2 c coconut oil
- 1/3 c cocoa powder
- 1/3 c dark chocolate chips, melted
- 2 tsp pure vanilla extract
- 1/2 tsp fine-grain sea salt
- 1/2 tsp espresso powder (optional)
- Shaved chocolate (optional)
- Coconut flakes (optional)
