Chia Peach/Mango Pudding

Puree two peaches or mango in a food processor, then pour into a bowl
- Peaches and Cream Chia Seed Pudding
- Ingredients
- 1 1/2 cups Almond Milk
- 2 Peaches or Mango
- 2 tablespoons Organic Chia Seeds
- 1 tablespoon Blue Agave Nectar
- Pinch of Salt (approximately 1/16 teaspoon)
Blueberry Coconut Crisp with Vanilla Ice Cream

Preheat oven to 425°F
- 2 pints fresh blueberries, picked over
- 1/3 cup sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1/3 cup chopped walnuts
- 1/3 cup sweetened flaked coconut
- 1/3 cup rolled oats
- 1/3 cup all-purpose flour
- 4 tablespoons cold unsalted butter, cut into pieces
- Pinch of salt
- Vanilla ice cream
Thai Veggie Salad

1. Make the salad: Toss all the salad ingredients together in a large bowl
- Salad
- 1 red bell pepper, thinly sliced
- 1 bunch scallions, thinly sliced
- 3 cups snow peas, thinly sliced
- 3 carrots, thinly sliced or shredded
- 1 bunch radishes, thinly sliced or shredded
- 1/4 red cabbage, thinly sliced or shredded
- 1/2 English cucumber, cut into strips
- 1 cup dried mango, thinly sliced
- 2/3 cup peanuts, chopped (plus extra for garnish)
- 3/4 cup fresh cilantro, chopped (plus extra for garnish)
- 1/4 cup fresh mint, chopped
- Dressing
- 3 garlic cloves, minced
- 1-inch piece fresh ginger, minced
- 1 tablespoon sesame oil
- 3 tablespoons soy sauce
- 1 tablespoon Sriracha sauce
- 1/2 cup seasoned rice-wine vinegar
- 1/3 cup peanut butter
Mini Mummy Pizzas

Enjoy these English muffin pizzas, topped with greens and sweet peppers, for breakfast, lunch or dinner
- 4 whole wheat English muffins, split and toasted
- 2/3 cup red pepper marinara sauce
- 1 cup finely chopped kale or chard
- 1 yellow or green bell pepper, cored and finely chopped
- 1 (6-ounce) package light string cheese
- 16 slices black olives
Culiflower Curry with Shallots

1. Make the curry: In a large pot, heat the coconut oil over medium heat
- Curry
- 1 tablespoon coconut oil
- 1 onion, diced
- 3 garlic cloves, thinly sliced
- 1 head cauliflower, cut into florets
- 3 tablespoons yellow curry paste
- One 14-ounce can coconut milk
- Salt and freshly ground black pepper
- Shallots
- 1/4 cup olive oil
- 1 large shallot, thinly sliced
- Garnish
- 1 bunch scallions, thinly sliced
- 1/2 cup chopped fresh cilantro
Kirby's "Kandy" (Granola)

Pour onto 2 cookie sheets or casserole pans
- 5 c rolled oats
- 1 1/2 c shredded unsweetened coconut
- 1 1/2 c oat bran
- 1 c sunflower seeds
- 1 1/2 c pecans broke in half
- 1 1/2 c chopped almonds
- 1/2 c flax seeds (ground or whole)
- 1/2 c amaranth grain (uncooked)
- 1 1/2 c olive oil
- 1 1/2 c maple syrup
Spicy Black Bean and Corn Chili

Saute all veggies in oil, add the rest and simmer for 30 minutes or more
- 1 medium onion
- 1 tsp. olive oil
- 3 cloves garlic
- 1 cup chopped zucchini
- 1 cup chopped bell peppers (green and/or red)
- 2 cups white corn frozen or fresh
- 2-15 oz. cans crushed tomatoes
- 1/2 cup any salsa
- 2-15 oz. cans beans, drained (black or pinto)
- 2 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. oregano
- Add any veggies to make more.
Chocolate Truffles

Yield: About 30 truffles Prep Time: 3 1/2 hours
- 7 ounces (66 to 72%) chocolate, finely chopped
- 2/3 cup heavy cream
- 1 Tablespoon honey
- 2 Tablespoons salted butter, at room temperature
- 2 to 3 Tablespoons unsweetened cocoa powder
