Pasta with Peas, Artichokes, Lemon and Mint

Easy Peasy! Pun intended!
- 1 pound bucatini, spaghetti or other long pasta
- 1 1/2 cups fresh peas
- 12 marinated artichoke heart quarters, drained (available at gourmet grocery stores)
- 3 tablespoons unsalted butter
- 1/2 cup grated Pecorino cheese
- 2 tablespoons lemon juice
- Salt
- 2 tablespoons freshly chopped mint, for garnish
- Lemon zest, for garnish
- Freshly ground black pepper, for garnish
Chicken Slaw

A favorite dish at potlucks!
- Dressing:
- 2 - 3 chicken breasts, cooked
- 2 Tbsp. sesame seeds
- 1/2 cup slivered almonds
- 1 head green cabbage, shredded
- 4 green onions, chopped
- 1 pkg. chicken Top Ramen noodles
- 1 green bell pepper
- 1 can chunk pineapple
- 1 can water chestnuts
- 2 Tbsp. sugar
- 3 Tbsp. white vinegar
- 1/2 cup oil
- 1 tsp. salt (optional)
- 1/2 tsp. pepper
- 1/2 - 1 pkg. chicken seasoning from Top Ramen
Cinnamon-Mascarpone Pudding

1. Place 6 to 8 small bowls or ramekins onto a baking sheet
- Pudding
- 1/2 cup sugar
- 1 1/2 tablespoons cornstarch
- 1 cup whole milk
- 3 egg yolks
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon, plus extra for garnish
- 2 cups mascarpone cheese
- Topping
- 1 cup heavy cream
- 3 tablespoons granulated sugar
- 1 cup fresh berries (like blackberries, raspberries, and strawberries)
4 ingredient dark chocolate almond butter cookies

Line two cookie sheets with unbleached parchment paper and set aside
- Yield: 18 cookies
- Total Time:20 minutes
- 1/2 lb dark chocolate, vegan if need be
- 1 cup almond butter
- 1/3 cup coconut oil
- 3 cups rolled oats, gluten free
- 2 tsp vanilla extract, optional

Preheat oven to 350° F. Mix together flour, sugar, and salt
- 2 c. flour 1 tsp. baking powder
- 1/2 c. sugar Dash of salt
- 1 c. butter 1/2 c. water
- 1/4 tsp. salt 1/2 c. lemon juice
- 4 eggs 3 drops lemon essential oil
- 6 Tbs. flour 1 Tbs. powdered sugar
- 1 1/2 c. sugar Lemon zest (optional)
Blueberries with Cashew Sauce

Don't know what to serve for dessert? Make this sauce and pour over blueberries or your favorite fresh fruit
- 2 pints fresh blueberries
- 1 cup cashews
- 1/2 cup water
- 1 TBS maple syrup or to taste
- pinch of sea salt
- 1-1/2 tsp almond extract

Bring margarine, water, shortening & cocoa to a boil
- Frosting:
- 2 C Flour
- 2 C Sugar
- 1 stick butter
- 1 cup cold water
- 1/4 cup shortening
- 4 Tbsp. Cocoa
- 2 eggs
- 1 tsp. baking soda
- 1 tsp. vanilla
- 1/2 cup buttermilk
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 stick butter
- 2 Tbsp. cocoa
- 2 1/2 Tbsp. milk
- 1/2 cup walnuts
- 1/2 box powdered sugar
Summertime Caprese Salad

In a medium bowl, mix together parsley, basil, oregano, capers, garlic, and olive oil
- 1 tablespoon minced Fresh Parsley
- 1/2 teaspoon Dried Basil
- 1 pinch Dried Oregano
- 1 tablespoon Capers, drained
- 2 cloves Garlic, minced
- 6 tablespoons Olive Oil
- Freshly ground Pepper and Sea Salt
- 1 pound fresh Mozzarella Cheese, sliced
- 2 large ripe Tomatoes, thinly sliced
- 1 bunch Fresh Basil (about 20-30 leaves)
- 1 (7 ounce) jar Roasted Red Peppers, drained and julienned
- Crushed Red Pepper, to taste

- 50 ml glass dropper bottle (where to buy online) – we save old stevia bottles and use them for things like this!
- 4 Tablespoons of Almond oil (where to buy) or Jojoba oil (where to buy)
- 7 drops each of Lavender, Frankincense, Geranium, and Myrrh Essential Oils (where to buy)
- Empty 2 capsules of Vitamin E (OPTIONAL)
