- 2-1/2 cups pitted dates, cut up
- 1/4 cup sugar
- 1-1/2 cups water
- 1/3 cup coarsely chopped walnuts, optional

- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1-1/2 cups quick-cooking oats

Mac and Cheese Carbonara

- 1 tablespoon olive oil
- 1 -inch thick piece pancetta, cut into small dice

- 2 pounds skinless fish (halibut, tilapia, flounder, mahi mahi, salmon, or cod all work great)
