1. In a medium bowl, whisk the flour, cornstarch, baking powder and salt to combine
- Cauliflower:
- 1/2 cup all-purpose flour
- 1/3 cup cornstarch
- 3/4 teaspoon baking powder
- 1 teaspoon salt
- 2 eggs
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1/2 cup neutral oil (like peanut or vegetable)
- 1 head cauliflower, cut into bite-size florets
- Sauce:
- 2 teaspoons sesame oil
- 6 scallions, white part finely sliced, green part chopped into 1-inch pieces
- 3 cloves garlic, minced
- 1 tablespoon minced ginger
- 5 small dried chilies (optional)
- 1/4 cup vegetable broth
- 1/4 cup soy sauce
- 3 tablespoons rice vinegar

Wild Mushroom Flatbread Pizza

- 1/4 cup (1/2 stick) butter
- 2 shallots, thinly sliced
- 1 to 2 cloves minced garlic
- 3 cups chopped exotic mushrooms (oyster, shiitake, etc.)
- Sea salt and freshly ground pepper to taste
- 1/4 cup sweet vermouth
- 4 (about 10-inch) pieces Italian herb flatbread (see note)
