Tom's Spaghetti Carbonara

In a large pot of boiling salted water, cook spaghetti pasta until al dente
- 1 pound spaghetti
- 1 tablespoon butter or olive oil
- 8 slices bacon, diced
- 1 tablespoon butter or olive oil
- 1 onion, chopped
- 1 clove garlic, minced
- 1/4 cup dry white wine (optional)
- 4 eggs
- 1/2 cup grated Parmesan cheese
- 1 pinch salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
- 2 tablespoons grated Parmesan cheese
Tommy's Supreme Soy Sauce Fried Rice

Put all the ingredients in a small saucepan over medium heat
- 2 teaspoons fish sauce
- 2 tablespoons dark soy sauce
- 2 tablespoons light soy sauce
- 2 teaspoons Shaoxing wine
- 1 teaspoon sugar
- 1 teaspoon vegetable or canola oil
- 1 teaspoon oyster sauce
- 3 eggs, beaten
- 1 teaspoon Shaoxing wine
- Salt, to taste
- 3 tablespoons oil, divided
- 6 cups of cooked rice, cooled
- Your Soy Sauce mixture (see above)
- 3 scallions, finely chopped

- 1/4 teaspoon white pepper
- 1 shake or more cayenne pepper

Tom's Sausage-Potato Lasagna

Directions: I use a 2 pound bag of cheese, you never have enough
- 1 1/2 pound Sweet Italian sausage or ground turkey sausage
- 2 cups sliced fresh mushrooms (Baby Bella's are best)
- 6 medium (2 pounds) potatoes (such as long white, round white, round red, or yellow), peeled and thinly sliced (6 cups)
- 2 beaten egg
- 2 cups ricotta cheese or cream-style cottage cheese, drained
- 1 cup grated Parmesan or Romano cheese
- 1 16 ounce package frozen chopped spinach, thawed and very well drained
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 1 teaspoon ground nutmeg
- 2 cups whole milk
- 2 cups shredded mozzarella cheese

- 1/2 cup unsalted butter
- 1 cup packed brown sugar
- 2 tablespoons corn syrup
- 6 (1-inch thick) slices French bread
- 5 eggs
- 1 1/2 cups half-and-half cream
- 1 teaspoon vanilla extract
- 1 teaspoon brandy-based orange liqueur (such as Grand Marnier®)

- 1 cup milk
- 2 1/2 teaspoons Lesaffre instant dry yeast

Place turkey wings and onions in a greased 13-in
- 2 turkey wings (1-1/2 to 2 pounds)
- 2 medium onions, quartered
- 2 quarts chicken or turkey stock
- 2 medium carrots, cut into 2-inch pieces
- 2 celery ribs with leaves, cut into 2-inch pieces
- 4 fresh thyme sprigs
- 1/2 cup plus 2 tablespoons all-purpose flour
