My Best Swedish Meatballs

Melt 2 tablespoons butter in a large skillet over medium heat
- Meatballs:
- 2 tablespoons butter
- 1/2 yellow onion, finely chopped
- 1 1/2 teaspoons fine salt
- 1/4 cup milk
- 2 large eggs+1 egg yolk
- 1/3 cup plain bread crumbs(good quality)
- 1 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1 pinch cayenne pepper, or to taste
- 1 pound ground beef chuck
- 1 pound ground pork
- Gravy:
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 3 1/4 cups beef stock
- 1/2 cup heavy cream
- 1/2 teaspoon brown sugar
- 1/2 teaspoon Worcestershire sauce
- salt and freshly ground black pepper to taste
- cooking spray
Seafood Bisque

1 In 4-quart Dutch oven, melt butter over medium-high heat
- 1/3 cup butter or margarine
- 1/3 cup all-purpose flour
- 1 carton (32 oz) chicken broth (4 cups)
- 4 cups (1 qt) half-and-half
- 1/2 cup dry white wine or water
- 1/2 cup chopped drained roasted red bell peppers (from 7-oz jar)
- 12 oz cod fillet, cut into 1-inch pieces
- 12 oz uncooked peeled de-veined medium shrimp, thawed if frozen and tails peeled
- 1/2 cup basil pesto
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground pepper
Smoked Sausage, Butternut Squash and Wild Rice Soup

Preheat the oven to 400 degrees F
- 1 medium butternut squash, about 1 1/2 to 2 pounds
- 2 tablespoons olive oil
- Salt
- Freshly ground black pepper
- 12 cups chicken stock
- 2 1/2 cups chopped onions
- 1 cup wild rice
- 3/4 pound smoked sausage, such as kielbasa, cut into 1/4-inch
- 2 cups fresh corn kernels
- 1 1/2 cups half and half
- 1 tablespoon chopped fresh parsley leaves
Candied Bacon

- For the Candied Bacon:
- 1 pound Thick Cut Bacon
- 1/2 cup Dark Brown Sugar
- 1/4 cup Maple Syrup
- 1 tablespoon Dijon Mustard
- 2 teaspoons Apple Cider Vinegar
- 1/8 teaspoon Cayenne Pepper (or more to taste)
- Salt and freshly cracked Black Pepper
Senegalese Sweet Potato and Peanut Soup

- 2 tablespoons olive oil
- 1 large onion, cut into small dice
- 3 ribs celery, cut into small dice
- 3 large carrots, peeled cut into small dice
- 2 medium sweet potatoes, peeled and cut into medium dice
- 1 tablespoon minced garlic
- 2 tablespoons minced ginger
- 1 medium jalapeño, seeded and finely diced
- 1 bunch cilantro stems minced, leaves set aside for garnish
- 3 cups low-sodium vegetable broth
- 1 (28-ounce) can diced tomatoes with juice
- 2/3 cup creamy peanut butter
- 1 cup coconut milk
- 2 cups baby spinach, roughly chopped
- Kosher salt and freshly ground black pepper

- 8 skinned and boned chicken thighs (about 2 pounds)
- 2 teaspoons dried Italian seasoning
- 1 teaspoon salt

- 1 small onion, chopped
- 1 medium-size green bell pepper, chopped
- 1 garlic clove, minced
- 1 jar (24 ounces) tomato-and-basil pasta sauce
- Hot cooked fettuccine

Spicy Citrus Bloody Mary

Directions Muddle ice, lemon wedges, lime wedges, horseradish, jalapeno, and salt in the bottom of a pitcher
- 2 to 3 cups ice
- 1 lemon, cut into wedges
- 1 lime, cut into wedges
- 1 tablespoon horseradish, drained
- 1 jalapeno pepper, minced
- Pinch salt
- 2 cups vodka
- 3 cups tomato juice

- 2 pounds russet potatoes, peeled, coarsely grated on a box grater and squeezed dry in a kitchen towel
- 1 teaspoon granulated garlic
- 1 teaspoon paprika
- 1/4 teaspoon cayenne
- Salt and freshly cracked black pepper
- 2 tablespoons butter
- 2 tablespoons olive oil
Mashed Potatoes & Clouds

- 3 pounds potatoes, washed and cut into 2 inch chunks
- 8 tablespoons unsalted butter
- 3 medium garlic cloves minced
- 1 pinch of saffron
- 1 teaspoon dried coriander
- 1/3 cup toasted sliced almonds
- 1 tablespoon toasted sesame seeds
- 2 tablespoons dried oregano
- 1 cup whole milk, gently warmed 1 1/2 teaspoons sea salt, plus more to taste
