Winter Squash Soup with Chipotle Peppers and Cream

Preheat oven to 400°F. Cut butternut and acorn squash in half lengthwise
- 1 medium butternut squash
- 1 medium acorn squash
- 4 tablespoons olive oil
- 2 carrots, coarsely chopped
- 2 celery ribs, coarsely chopped
- 1 medium onion, coarsely chopped
- 3 garlic cloves, minced
- salt and pepper
- 3/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- 8 ounces Whipping Cream
- 1 small jar chipotle chili in adobo sauce, chopped, for topping
- 3 tablespoons fresh cilantro, chopped, for topping
- sour cream, for topping
Brunch-Style Portobello Mushrooms

- 4 large portobello mushrooms, stems removed
- 2 packages (10 ounces each) frozen creamed spinach, thawed
- 4 eggs
- 1/4 cup shredded Gouda cheese

Pan Fried Fish with Cajun Tartar Sauce

Thaw fish if frozen. Preheat oven to 300 degrees F
- Cajun Tartar Sauce:
- 4 fresh or frozen tilapia or other whitefish fillets, 1/2 to 3/4 inch thick
- 1 egg, lightly beaten
- 2 tablespoons water
- 2/3 cup yellow cornmeal or fine dry bread crumbs
- 1/2 teaspoon salt
- 1/2 teaspoon lemon pepper seasoning
- 1/8 teaspoon cayenne pepper, or to taste
- Vegetable oil or shortening for frying
- 3/4 cup mayonnaise
- 1/4 cup finely chopped sweet pickles or sweet pickle relish
- 1 tablespoon finely chopped onion
- 1 tablespoon lemon juice
- 1 teaspoon Cajun seasoning, or to taste
- Hot pepper sauce

- 1/3 cup butter
- 4 eggs
- 1 cup milk
- 1 cup whole wheat pastry flour
- 1 tablespoon green onions, chopped

- For the Cinnamon Spiced Bread Crumbs:
- 1/2 cup bread crumbs, preferably homemade
- 1 tablespoon light brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1 tablespoon melted butter
- For the Caramelized squash:
- 1 small butternut squash, peeled and cut into 1-inch cubes (about 3 cups)
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon fresh grated nutmeg
- 2 tablespoons melted butter
- 1/4 teaspoon kosher salt
- For the Squash and Bread Pudding:
- 4 eggs
- 1 1/2 cups granulated sugar
- 1/2 vanilla bean, seeds scraped and reserved
- 2 cups whole milk
- 2 cups heavy cream
- 1 1/2 teaspoons ground cinnamon

Place the celery into hand style food chopper and chop for about a minute, until the celery is at a rough dice
- 6 hard boiled eggs, quartered
- 6 slices crispy bacon, roughly crumbled (we put ours in the toaster oven for 15 minutes at 400F)
- 2 cups roughly chopped celery stalks (include the leaves)
- 1/4 cup mayo
- 1/8 cup Worcestershire sauce
- 2 tablespoons tomato paste
- 1/2 teaspoon horseradish
- juice from 1/2 of a lemon
- Tabasco sauce, to taste (we did about 8 drops)
- 1/8 cup sugar
- 1 teaspoon salt
- 1 teaspoon coarse black pepper
