Caramel Delight

Combine dry ingredients, stir in melted butter
- 1 1/2 cups flour
- 1 cup quick cooking oatmeal
- 1/2 cup brown sugar
- 1 1/2 cup chopped nuts
- 1 cup butter, melted
- 1 jar (6 oz.) caramel topping
- 1/2 gallon ice cream, softened (any flavor ice cream can be used)
Spiced Baked Apple Dumplings

Preheat oven to 375 degrees
- Dough:
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
- 2/3 cup butter (very cold)
- 1/2 cup milk
- Apples:
- 4 medium apples, peeled and cored
- 1/2 - 3/4 cup brown sugar, packed
- 3 tbsp. ground cinnamon
- 2 tsp. nutmeg
- 1/2 cup raisins or golden raisin, or a combination of both
- 3 oz. butter
- Syrup:
- 1/3 cup butter
- 1 1/3 cups hot water
- dash of cinnamon
- dash of nutmeg
- pinch of cloves
- pinch of ginger
Pita Pizza

Set oven to broil. Brush pita bread with olive oil, put on a baking sheet and broil 4" from the heat for 2 minutes
- 2 pieces whole-wheat pita bread
- 2 tbsp. olive oil, divided
- 2 cups low-sugar pizza or pasta sauce, divided
- 1 tomato, sliced thinly
- 8 slices deli ham, cut into fourths
- 1/4 cup low-fat shredded mozzarella cheese
Truffles - Simply Sensational

Melt 8 chocolate squares. Beat cream cheese with mixer until creamy
- DECORATIONS:
- 2 1/2 pkg. (8 squares each) Baker's semi-sweet chocolate (20 squares), divided
- 1 pkg. (8 oz) cream cheese, softened
- chopped cocktail peanuts
- multi-colored sprinkles
Cabbage Rolls

First, steam the entire head of cabbage in a pot of boiling water, making sure to cut off the core first
- 12 cabbage leaves
- 1 cup cooked white rice (cook in beef broth for added flavor)
- 1 egg, beaten
- 1/4 cup milk
- 1/2 cup minced onion
- 1 lb. extra lean meat, half ground beef and half ground pork
- 1 1/4 tsp. salt
- 1 tsp. pepper
- 1/4 tsp. garlic powder
- 2 8 oz. cans tomato sauce
- 1 14.5 oz. can diced or crushed tomatoes, with liquid
- 1 tbsp. brown sugar
- 1 1/2 tbsp. lemon juice
- 1 tbsp. Worcestershire sauce
Pizza Pasta Salad

Combine all ingredients. Refrigerate for at least 1 hour
- 3 cups penne pasta, cooked, rinsed
- 4 tomatoes, chopped
- 12 slices hard salami, chopped
- 1 cup finely shredded italian five cheese blend
- 1/2 cup sliced fresh basil
- 1/2 cup tuscan house italian dressing
Chocolate Chip Coconut Bars

Bake at 350 degrees for 20 to 25 minutes in a 9" x 13" pan
- Add:
- 2/3 cups margarine
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- Combine and beat well.
- 3 tbsp. water
- 1 tsp. vanilla
- Add:
- 2 cups sifted flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup coconut
- 1 pkg. chocolate chips
Chicken Pot Mini Pies

Defrost pie dough in refrigerator overnight
- 2 pkg. pie dough, store bought
- 2 tbsp. butter
- 1 onion, diced
- 1 garlic clove, minced
- 1 sprig thyme leaves
- salt
- pepper
- 3 tbsp. flour
- 1 cup chicken stock
- 1/2 cup heavy cream
- 1 store bought rotisserie chicken, deboned
- 1 cup frozen peas and carrots, thawed
- 1 egg, beaten

In a heavy duty large pot, mix sugar, syrup, salt and 2 cups of cream together
- 4 cups white sugar
- 2 cups white corn syrup
- 1/2 tsp. salt
- 1 quart whipping cream, divided
- 1 large can evaporated milk
- 1 cup chopped pecans, optional
- candy thermometer
- 9 " x 13" greased pan
