Beet Crust Pizza

- Topping:
- Crust: (makes two 12 inch crust)
- 1 cup lukewarm water
- 2 teaspoon active-dry
- 17 ouncesunbleached all-purpose flour
- 1 1/2 teaspoons kosher salt
- 2 teaspoons honey
- 3/4 cup pureed beets (about 2 large beets, roasted and peeled)
- 4 oz. goat cheese
- 10-12 stalks of asparagus, trimmed, blanched and then tossed in 1 tablespoon of olive oil and 1/4 teaspoon of salt and pepper
- 3 soft boiled eggs, sliced
- 1 roasted beet, sliced
- 4 oz. mini heirloom tomatoes, halved
- 3-4 tablespoons pesto (optional)
- 1 handful of watercress (optional)

- 2 medium-large sweet potatoes (1 1/2 pounds, jewel), scrubbed, cut into 1" chunks
- 5 tablespoons extra-virgin olive oil, divided use

- 1 cup quinoa (preferably multi-colored)
- 1 large bunch kale (preferably black/dino kale)
- 1 tablespoon cumin seed
- juice of 1 lemon (or more, to taste)
- freshly ground black pepper
- 1/2 cup parsley, finely chopped
- 2/3 cup dried cranberries
- 2/3 cup toasted pecans, broken up or coarsely chopped

- 10 tbsp. unsalted butter, melted
- 1/4 cup plus 2 tablespoons light brown sugar (firmly packed)
- Guinness chocolate filling:
- 8 large egg yolks
- 1 cup sugar
- 14.9 oz. can Guinness Draught, divided
- 2 1/4 cups heavy cream
- 7 oz. high quality bittersweet chocolate, evenly chopped
- 1/4 cup cornstarch
- Beer marshmallow topping:
- 2 cups sugar
- 4 egg whites
- 1/4 cup plus 2 tbsp. water
- 1/4 tsp salt
- 12 jumbo marshmallows (or about 18-20 large) cut into quarters with kitchen scissors
- 3 tbsp. beer reduction (as instructed *)
