Caramel Apple and Pretzel Pie

  • Pretzel Crust
  • 1-1/2 c ground pretzel crumbs, toasted
  • 1/2 c graham cracker crumbs
  • 1-1/2 T dark brown sugar
  • 1 t kosher salt
  • 3 T unsalted butter, melted
  • 1 T heavy cream
  • Apple Filling
  • 3-1/2 T unsalted butter, melted
  • 2-1/4 c white chocolate chips, melted and divided
  • 6-1/2 T heavy cream
  • 3 t vanilla
  • 1 egg yolk
  • 1/2 c plus 3 t flour
  • 1 t kosher salt
  • 1 c (about 1/2 can) canned apple pie filling
  • 3/4 c butterscotch chips, melted


Preparation time 20mins
Cooking time 75mins


Step 1

In large bowl, mix all ingredients together with a spoon until well combined. Transfer mixture to pie plate and press crust evenly along all sides corners and bottom. Set aside.

Preheat oven to 325. In a large bowl, whisk together melted butter and 2 c of white chocolate chips, heavy cream, vanilla and egg yolk. Add in flour, salt,,whisking well to combine.
With a spatula, fold in pie filling. Pour filling into pretzel crust and bake for 55 mins until set in the center. Cool pie completely in fridge for 3 hours or freezer for 2 hours until chilled thru. Cover pie with melted butterscotch and drizzle 1/4 c melted white chocolate on top. Slice and serve.
