Cheeseburger Shepherd's Pie

Preheat oven to 350 degrees F
- 1 1/2 pounds russet potatoes, peeled and cut up
- 1/2 cup light sour cream
- 1/4 cup milk
- 1/2 teaspoon salt
- 1 cup shredded cheddar cheese (4 ounces)
- 1 1/2 pounds lean ground beef
- 1 medium red sweet pepper, chopped (3/4 cup)
- 1 medium onion, chopped (1/2 cup)
- 2 cloves garlic, minced
- 1 6 ounce can tomato paste
- 1 cup water
- 1/2 12 ounce package frozen whole kernel yellow corn (1 1/2 cups)
- 1/2 cup coarsely chopped dill pickle
- 1/4 cup yellow mustard
- 1 teaspoon dried oregano, crushed
- Shredded cheddar cheese
- Sliced green onions and/or crisp-cooked bacon (optional)
Chicken Tenders

Preheat oven to 450°F. Line a rimmed baking sheet with foil and lightly coat with cooking spray
- Nonstick cooking spray
- 3 pounds chicken tenders or skinless, boneless chicken breasts, cut into ½-in.-thick strips
- Kosher salt
- Freshly ground black pepper
- 1 cup all-purpose flour
- 1½ teaspoons paprika
- 1 teaspoon ground mustard
- ½ teaspoon garlic powder
- 4 large eggs
- ¼ cup whole milk
- 5 tablespoons unsalted butter, divided
- 4 cups Panko breadcrumbs, divided
- ½ cup mayonnaise
- ¼ cup Dijon mustard
- 3 tablespoons honey
New York Style Cheesecake

Adjust oven rack to middle position
- 2 1/3 C graham cracker crumbs
- 1/4 C flour
- 1/2 C unsalted butter, melted and cooled
- 3-8 oz. Pkgs cream cheese, softened
- 3/4 C + 1 T sugar
- 4 large eggs
- 2 large egg yolks
- 1/2 C heavy cream
- 1 t lemon zest
- 1/2 t vanilla extract
Mini Apple Pie

1. Stir together 6 T brown sugar, almonds and flour in small bowl
- 1/2 c firmly packed brown sugar, divided
- 1/3 c sliced almonds
- 1/4 c flour
- 3 T butter, cold
- 1 pkg. (15 oz. ) refrigerated pie crusts
- 1-1/3 lbs. apples, cored and chopped
- 1/2 t cinnamon
- 1/2 t vanilla
- Whipped topping
Peanut Butter Cups

Crush graham crackers, melt butter and mix all ingredients together except chocolate chips
- 1/3 lb. graham crackers
- 1 1/2 sticks of butter
- 1 lb. powdered sugar
- 1 c peanut butter
- 1-12oz. pkg. chocolate chips
Spicy Corn and Cucumber Salsa

Stir all together
- 1-1/4 c fresh corn kernels
- 1-1/4 c Persian cucumbers (or English), chopped
- 3 T fresh cilantro, chopped
- 2 T fresh lime juice
- 1 red Fresno chile, chopped
- 3/4 t kosher salt

Crush graham cracker, melt butter and mix everything together except chocolate chips
- 1/3 lb. graham crackers, crushed
- 1-1/2 sticks butter
- 1 lb. powdered sugar
- 1 c peanut butter

Creamy Soup Base

Stir together milk and water until dissolved in medium saucepan cook onion and garlic in butter until tender
- 2 c non-fat dry milk powder
- 2 c water
- 1 c chopped onion
- 2 cloves garlic
- 1/4 c butter
- 1/3 c corn starch
- 1 t salt
- 1/2 t pepper
Sausage-Cheddar Balls

- 1/2 teaspoon coarse salt
- 1/4 teaspoon ground pepper
- 1/2 teaspoon cayenne pepper
- 1 1/2 teaspoons baking powder
- 2 cups grated cheddar (1/2 pound)
- 1 pound bulk breakfast sausage
- 1/2 large yellow onion, grated on large holes of a box grater
- 3 tablespoons unsalted butter, melted
Slow Cooker Puttanesca

Combine all ingredients except pasta and Parmesan cheese into a 4 to 6 quart slow cooker
- 1-28 oz. can whole peeled tomatoes, crushed
- 1/2 lb. ground beef
- 1/2 c pitted kalamata olives, halved
- 2 T tomato paste
- 2 T drained capers
- 1 small yellow onion, chopped (about 3/4 c)
- 2 cloves garlic, chopped
- 3/4 t kosher salt, divided
- 1/4 t pepper
- 8 oz. pappardelle pasta
- Shaved Parmesan cheese
