Butternut Bisque

Smoothed in a blender and stashed in the freezer
- Ingredients
- 3 tablespoons butter
- 1 medium onion, coarsely chopped
- 2 garlic cloves, sliced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground cinnamon
- 1/8 to 1/4 teaspoon cayenne pepper plus more for garnish (optional)
- Coarse salt
- 1 large butternut squash (about 4 pounds), peeled, seeded, and cut into 1-inch cubes
- 1 can (14 1/2 ounces) reduced-sodium chicken broth
- 1 cup half-and-half
- 1 tablespoon fresh lemon juice
- Sour cream, for serving
BBQ Black Beans

"Top Secret Recipes" version of El Pollo Loco's BBQ Black Beans
- 2- 15 oz cans black beans w/ liquid
- 1 1/2 cup water
- 1 cup chicken broth
- 1/2 cup dark brown sugar
- 3 T ketchup
- 3 T bacon fat (from 2-3 pieces)
- 2 T red wine vinegar
- 2 T minced canned green chiles
- 1/4 ts cayenne pepper
Watermelon Ice ****

- 1-5 # seedless watermelon
- 1/2 cup sugar
- red & green food coloring
- 1/2 cup light corn syrup
- 1/4 cup fresh lime juice
- 1 Pint lemon sorbet
- 2 T mini-semisweet choc chips
Classic Tortilla Soup****

Directions Soup: Heat a heavy saute pan over medium-high heat

- Ingredients
- 4 large plum tomatoes
- 1 small white onion or a 1-inch-thick slice of a large white onion, peeled
- 4 garlic cloves, unpeeled
- 1 medium dried New Mexico chile, stemmed, seeded, and torn into large pieces
- 6 cups chicken broth
- 2 corn tortillas, torn into 1-inch pieces
- Salt and freshly ground black pepper
- Tortilla strips:
- 6 corn tortillas, cut into 1/2-inch wide strips
- Vegetable oil, for shallow frying
- 6 to 8 canned chipotle chiles in adobo sauce, optional for garnish
- Mexican sour cream or regular sour cream, for serving
- 2 avocados, peeled and diced into 1/2-inch cubes or slices
- 1 queso fresco or mild feta cheese, crumbled
Corn Bread Muffins*****

- 3/4 cup (1 1/2 sticks) unsalted butter, melted
- 3 cups heavy whipping cream
- 3 large eggs
- 3 1/2 cups all-purpose flour
- 1 1/2 cups coarse cornmeal plus extra to sprinkle over
- 1 cup sugar
- 2 tablespoons baking powder
- 1/2 teaspoon salt
- 1 cup fresh corn kernels or canned corn, drained (optional)

Jean Marie's Pasta Fasol "Pasta e Fagioli"****

I enjoy "Pasta e Fagioli", and this is another one of Jean's signature dishes
- 2 lg onions
- 5 cloves garlic
- 4 T olive oil
- 2 cans stewed tomatoes
- 2 cans kidney beans
- 2 cans great northern beans
- 2 cans navy beans
- 1 can chick peas
- I rinse all of the beans*
- 1 ts oregano
- 1 ts basil
- S & P to taste
- 1/2 cup sugar
- 1 cup white wine
- crushed red pepper flakes
- 8 cups chicken broth
- Parmesan Cheese
- Cooked macaroni or pasta of choice
Sausage balls ***
