Orange Delight Cookies

Want to make these orange cookies even more refreshing? Use fresh oranges straight from the orange tree!
- COOKIES:
- 2 cups all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup softened unsalted butter
- 3/4 cup sugar
- 1 egg
- 2 tablespoons orange zest
- 1/2 cup orange juice
- ORANGE FROSTING:
- 2 1/2 tablespoons softened unsalted butter
- 1 1/2 cups confectioners' sugar
- 2 tablespoons orange zest
- 1 1/2 to 2 tablespoons orange juice (I used closer to 2 1/2 tablespoons)

This recipe calls for the "cooked" frosting that I remember from the original Red Velvet cakes
- Cake:
- 2 cups Flour
- 2 cups Sugar
- 1/4 teaspoon Salt
- 4 Tablespoons (heaping) Cocoa
- 2 sticks Butter
- 1 cup Boiling Water
- 1/2 cup Buttermilk
- 2 whole Beaten Eggs
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla
- Frosting:
- 5 Tablespoons Flour
- 1 cup Milk
- 1 teaspoon Vanilla
- 1 cup Butter
- 1 cup Granulated Sugar (not Powdered Sugar!)
Fettuccini Alfredo

Prepare fettucine pasta as directed on box
- 1/2 cup real butter
- 1 pint heavy whipping cream
- 2/3 cup Parmesan/Romano cheese, freshly grated
- 1 teaspoon garlic powder (or 1 tablespoon fresh minced garlic)
- salt (to taste)
- freshly ground black pepper
- dash cayenne pepper
- 1 lb. fettuccine
- fresh parsley, chopped
Pork Egg Rolls

- Ingredients
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon light-brown sugar
- 6 cups (48 ounces) vegetable oil
- 1 napa cabbage (about 2 1/2 pounds), thinly sliced
- 4 medium carrots, coarsely grated
- 4 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- coarse salt and ground pepper
- 1 pound ground pork
- 6 scallions, thinly sliced
- 16 egg-roll wrappers (6 to 7 inches square)
- 1 large egg, lightly beaten
- bottled sweet-and-sour sauce and spicy mustard, for serving
Sweet and Spicy Cucumber Slices****

- 1-1/2 lbs cucumber (about 3 medium), peeled, halved lengthwise & thinly sliced

- 2 packets (1/4 ounce each) active dry yeast
- 1/4 cup olive oil, plus more for bowl

- 2 cups all-purpose flour
- 2 cups whole-wheat flour
Horseradish Cranberry Spread ***

The first time I had this was when Amy made it for New Year's Eve
- 1 can whole cranberry sauce
- 1/2 cup sugar
- 1/3 cup minced onion
- 2 T horseradish
- 1/2 ts salt
- if using dry minced onion, don't save leftovers, the flavor becomes over powering.
- 1-8 oz block of cream cheese
Espresso-Chocolate Shortbread Cookies****

1. Dissolve the espresso in the boiling water, and set aside to cool to tepid
- 1 tablespoon instant espresso powder
- 1 tablespoon boiling water
- 2 sticks (8 ounces) unsalted butter, at room temperature
- 2/3 cup confectioners’ sugar
- 1/2 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 4 ounces bittersweet chocolate (plain, or a toffee variety), finely chopped, or 3/4 cup store-bought mini chocolate chips
- Confectioners’ sugar, for dusting (optional)
Lemon Coconut Bread

- 2 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt

- 3/4 cups milk (lowfat is fine)
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 1 cup sugar
- 2 cups shredded coconut (sweetened or unsweetened)
