If prepared just right, this will look like you are serving a slice of watermelon. When I don't have time for the entire process, I just make up the "Watermelon Ice".

Ingredients

  • 1-5 # seedless watermelon
  • 1/2 cup sugar
  • red & green food coloring
  • 1/2 cup light corn syrup
  • 1/4 cup fresh lime juice
  • 1 Pint lemon sorbet
  • 2 T mini-semisweet choc chips

Preparation

Step 1

1- Puree fruit & sugar, add red food color, transfer to a bowl. Stir in corn syrup & lime juice; refrigerate.
(at this point it can be frozen for a quick treat)
2-Using a knife and large spoon, cut out and scrape all of the light green and whitish rind. Freeze shell for 2hrs
3-Slightly soften sorbet, fold in 1-2 drops of green food color. Spread into frozen shell, freeze 2hrs.
4- Once frozen,stir in choc chips. Spread mixture into shell. Freeze 4hrs.
5-Carefully slice into wedges!
