Ham Pie with Macaroni and Cheese****

1. Heat oven to 400°F. Spray 10-inch or 9 1/2-inch glass deep-dish pie plate with cooking spray
- 3 cups shredded Cheddar cheese (12 oz)
- 1 cup cubed cooked ham
- 1 cup uncooked elbow macaroni (3 1/2 oz)
- 2 1/4 cups milk
- 2 eggs
- 1/2 cup Original Bisquick mix
- 1/4 teaspoon salt
- Chopped fresh parsley, if desired

Tyler's Cheesecake *****

- Crust:
- 2 cups Nilla Wafer crumbs
- 1 stick butter, melted
- Filling:
- 1 1/2 lbs cream cheese
- 1 1/3 cups sugar
- 5 large eggs
- 16 oz sour cream
- 1/4 cup flour
- 2 ts vanilla extract
- 2 ts lemon juice
Frosted Lemon Poppyseed Cookies

These are drop cookies that come together very quickly
- 1/2 cup butter, softened
- 2/3 cup sugar
- 2 tbsp lemon zest
- 1 large egg
- 1 1/2 cups all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tbsp poppyseeds
- Lemon Glaze
- 1/2 cup confectioners’ sugar
- 2-3 tbsp lemon juice
Strawberry Mallow Cake Roll****

Directions Let eggs stand at room temperature for 30 minutes
- Ingredients:
- 4 eggs
- 2/3 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1/2 teaspoon vanilla extract
- Filling:(this is enough for two rolls)
- 2 cartons (8 ounces each) spreadable strawberry cream cheese
- 1 jar (7 ounces) marshmallow creme
- 2 cups sliced fresh strawberries, divided
- Chocolate syrup, optional
Peppermint Ice Cream****

I love this ice cream, by dissolving the soft mints in the milk you aren't left with chunks of peppermint
- 1 quart milk
- 1 # soft peppermints
- 1 cup half & half
- 1 cup whipping cream
Greek Seven Layer Dip*****

With an electric mixer, combine the cream cheese, seasoning, garlic, and lemon juice until light and fluffy
- 1 8-oz. package cream cheese, softened (I used low-fat)
- 1 tsp. dill weed or Greek seasoning (salt free–go for a mix that just has herbs)
- 3 cloves garlic, minced or pressed
- 2 tsp. lemon juice
- 1 1/2 c. hummus
- 1 c. seeded, diced cucumbers
- 1 c. seeded, diced tomatoes
- 1/2 c. chopped Kalamata olives
- 1/3 c. chopped green onions
- 1/2 c. crumbled Feta cheese
- 1/8-1/4 c. minced fresh parsley
Green Chile Wonton Cups*****

This is a family favorite! The cups can be made up ahead of time, baked, then frozen
- Filling:
- 1 pound shredded monterey jack cheese
- 1 cup sour cream
- 1/2 cup minced green onion
- 2/3 cup canned, minced, green chiles
- 1 tsp cumin
- 1 tsp oregano
- Cups:
- 1 package wonton wrappers
- olive oil
Corn Pudding****

Preheat oven 350* -Melt butter in med saucepan and add sugar
- 2- 12 oz cans corn
- 1/2 cup butter
- 1/2 cup sugar
- 1 T Flour
- 1/2 cup evaporated milk
- 2 eggs beaten
- 1 1/2 tsp baking powder
- 1 T melted butter
- 1/4 cup sugar
- 1/2 tsp cinnamon
Key Lime Pie Ice Cream *****

With chunks of graham cracker crust, and tart lime ice cream,it's perfect
- Graham Cracker Chunks:
- 4 large eggs
- 3/4 cup sugar
- 1/4 ts salt
- 2 1/4 cups heavy cream
- 3/4 cup milk
- Ice water
- 3 T key lime juice (Nellie & Joe's)
- I've also used lime syrup
- 3/4 cup graham cracker crumbs
- 2 T sugar
- 2 T butter(melted)
Coconut & Pecan Bar Cookies *****

Preheat oven 350F 1- Mix first three ingredients
- 1/2 cup soft butter
- 1 cup (135g) flour
- 4 T (57g) brown sugar
- 1 1/2 cups (341g) brown sugar
- 2 eggs, beaten
- 1/2 ts vanilla
- 1 cup coconut
- 1 cup chopped pecans
- 1/2 ts baking powder
